I'm addicted to tacos. I use hard corn tortillas, vegan refried beans, lettuce, tomato and/or salsa, onions, black olives, flavored rice, and either guacamole or plain avocado. I don't need the fake taco meat part, personally. I made a tempeh taco filling once and it was tasty, but for me not necessary. I usually buy a fake meat when I make them at home because my boyfriend (also vegan) does like that part. A vegan friend really likes the Tofutti Sour "Cream".
I absolutely love this vegan "queso" recipe on my tacos!! It doesn't look like it'd be as delicious as it is!
1 cup dried lentils, cook the lentils til soft. Add 1 can tomato sauce and taco seasonings. Cover simmer over low a few minuts to allow flavors to mix. Fill heated shells.
