i'm really confused about the health benifits of raw versus (dry) roasted nuts. according to raw foodists, roasting nuts is a cardinal sin (jk) because it supposedly damages the fats and nutrients in the nut. i've heard some people say that some how the mono- and poly-unsaturated fats are magically transformed into saturated fat (???) I've also seen some websites that claim there is no significant change. anywho, i would be really grateful if anyone can set me straight, because i am sick of trying to figure it out for myself. i think i know quite a bit about nutrition, but i don't think i know enough to really be able to judge for myself who is right. if someone could supply some unbiased, scientific information on this, i would be really grateful.
