    Default Baby Cakes Bakery recipes

    Hi,

    I just saw a couple of beautiful looking recipes by Erin McKenna from Baby Cakes Bakery in New York.

    I googled them and thought I would post the links - it is all allergy free apparently.

    BROWNIES (I would use carob instead of cocoa powder and chips)

    I see a couple of them use xanthan gum - I've never heard of anyone use that in home baking, let alone seen it in the shops.

    What effect would it have on cakes? (Seems it was extensively animal-tested, but that's OT).

    Ahhh, this explains the xanthan gum, especially in gluten free baking. I was a little puzzled by that myself.

    Funnily enough I saw some today for the first time in my local healthfood shop (although not this particular brand)

    I've never cooked gluten free cakes, so I don't know what effect it would have on home made ones, but I have tried gluten free vegan sponge cake that was shop bought and it was quite chewy. It's certainly better than nothing if you're gluten intollerant though.

    I found the Baby Cakes cakes very disappointing when I was there. I was so looking forward to them. (Even the frosting was horrible in my opinion.)

    I'm sorry to hear it was disappointing Marrers. They looked so good onTV. Maybe you chose the wrong thing on the day???

    Xanthum Gum is a gluten replacement. So, when you use other flours you add a little of that so it gets the benefits of gluten without the nasties. I use it and it seems OK to me.

    The bakery sounds amazing to me because I am gluten and sugar free so I NEVER get to have a recipe that I don't have to adapt!!!

    I had the cupcakes and bought some to take away too.
    The next time I went back I had a strudel which was okay but nothing fabulous.

    Perhaps as you are on a sugar and gluten-free diet you will like them (even though they aren't quite like 'normal' cakes - in the same way us vegans like fake 'cheese'!)

    On my last day in NYC i was dashing round trying to cram in all those lastminute things (and cutting it really fine coz I was sposed to already be on my way to the airport, but I just HAD to try BabyCakes), so anyway, having finally found the place, knackered and laden down with bags in the rain and in danger of missing my flight, I discovered I'd left it to the one day when it isn't even open!! Doh!!!! So to this day, I've yet to try em.

    Marrers, shame you didn't enjoy em, what do you think of the VWAV cupcakes? Sometimes things look great but don't taste so good, and viceversa.That's what I think anyway.
