    Default Victoria Sponge Recipe

    Hi everyone. I'm cooking a victoria sponge in about a week at school and I need a vegan recipe using easily available ingredients in the UK.

    I've looked on the internet but I couldn't find anything.

    I've also looked in my copy of Eva Batt's Vegan Cooking but I don't know what Barbados sugar is. Also what's the difference between cane sugar and normal sugar and is there any difference between white fat and ordinary vegetable fat.
    Anyone have any ideas?

    Eva Batt's book is good, but a little outdated. Barbados sugar is an obsolete name for muscovado. Cane sugar is just normal UK sugar (as opposed to Beet sugar). White fat is stuff like Trex, which I'm told is vegan (but have no evidence of).

    In terms of ease and guaranteed success I'd suggest you make this recipe, with 2 tsp vanilla essence in place of the lemon/lime juice and omit the peel. If you don't use an electric whisk then make sure you really go for it with a mixing spoon and get it in the preheated oven asap to capture all the air.

    Hi Reuben. Our very own Cherry has a website at http://www.parsleysoup.co.uk There's a recipe on there for lemon cake - I find that this recipe always works really well, so I would just omit the lemon and perhaps use a bit of vanilla essence? It's the best cake I have made so far - really light and fluffy

    Thanks for the delicious recipe I made 2 days ago.
    It was delicious!
    My friends that came round the same day that I made it tried some and they also thought it was delicious!
    They were amazed when I said it didn't have eggs or butter in.
    I just finnished the last piece now. Yum.
    I'm sure I'll be fine when I'm cooking it on Monday.

    I just made this cake for my partner, it's his birthday tomorrow (he's not vegan, but I love him enough to give him vegan cake) and unfortunately one half fell apart during transfer from the tin so I got to try a bit that fell off! Delicious!! I think he's going to love it. The icing's lovely too (well I had to lick the bowl!).
