Hello guys, i stumbled across this thread and i thought i might be able to answer a few of your questions.

I have worked as a chef for pizza express for the last 5 years,

my understanding of pizza express was that the bases and the tomato sauce were vegan, so as long as you didn't have cheese you were ok.

was always, as a veggie, very impressed that they didn't label the choices on the menu that contained parmesan as veggie, like so many other places, so i've always been very trusting of their vegan claim. please tell me this is so!

also, always wished they'd be able to do that aubergine thing without the cheese, but have been told a couple of times that it comes pre-done with the parmesan or something so can't be veganised. is that so?

also wish that, when you ask for no cheese, they'd be a little bit more liberal with the veg. surely they can't lose too much money over a few peas, aye?

The 'aubergine thing' is pre made yes, with the parmesan. sorry .

As for thr cheeseless pizza's. Personally, i tend to add a bit extra to beef it up a bit.

We do however, have strict food cost targets to meet so you will find chefs who wont add anything extra.

Savoury bread uses the same dough as our pizza's. One bread also uses the same tomato as our pizza's. It comes with chopped rosemary, garlic, and rock salt. Bit of pepper. Very tastey

As far as i'm aware, thats Vegan.
