we made this last night and it was absolutely delicious, and didn't just taste like cumin spice!!
we ate it in wholemeal chapattis.
125g puy lentils
125g brown or red camargue rice (we used brown basmati)
we used a load of cherry tomatoes
2 onions
2 garlic cloves crushed
1 tsp each of ground cumin, cinnamon, turmeric
2 tsp ground coriander
1/4 to 1/2 tsp cayenne pepper
2 tbs lemon juice
4 tbs chopped parsley

rinse lentils and simmer for 25-30mins till cooked. drain.
rinse rice and cook as for lentils. rinse & drain.
peel & slice onions, fry in 4tbs olive oil, with garlic gently for 15mins.
add spices and fry stirring for 3-4mins.
add tomatoes, chopped or whole as you like, lemon juice & 60ml water. cover & simmer for 20mins.
stir in cooked lentils & rice, add parsley and heat through, stirring all the time. season.
we had it in chapattis with vegan tzaziki.

takes about 1 1/4hrs.
