I need to resurrect this thread!
My doctor told me i need to eat more BEANS!!! Yay!!!
These are the baked beans every member of my omni family begs me to make:
One bag of beans(great Northern), soaked and simmered til done
a small can of tomato sauce(not paste)
a single serving can of pineapple juice
a handful of brown sugar
some mollasses
some garam masala

Put all that in your crock pot overnight on low, or at least 8 hours.

are they stil as nutritious when yuo do this?i always buy them dry..i quite like the satisfaction i get from cooking themlolherbwormwood
The easiest bean recipe you will find:
Fry some onions, garlic and ginger in a pan. Add a small can of chili beans and cook it for a few minutes. Add chopped tomatoes and some chopped herbs (basil or coriander) and serve with rice.
This recipe sounds great, but could you provide the measurements for each ingredient? I'm terrible at guesswork!qwaychou

Let's see if I can guess-timate my measures:
There, I hope that helps!! i have to make it this week, as a matter of fact, for my husband's family easter dinner.qwaychou

Summer Garden Bean Saute
1 can (about 1 lb size) of butter beans or chickpeas
1 small onion sliced and separated into rings
1 or 2 cloves garlic minced
1 zucchini (corquette?) cut into about 1" chunks (about 2 cups worth)
2-3 plum tomatoes chopped (or use a small can of drained chopped tomatoes)
Juice and grated rind of 1/2 a lemon
Olive oil
1. Drain the can of beans
2. Coat the bottom of a saute pan with oil and heat over medium heat.
3. Saute onion and garlic until onion is soft
4. Add the zucchini and saute until just fork tender
5. Add the tomatoes
6. Add the beans
7. Add the lemon juice and rind
8. Cook until the beans are heated through
I like this recipe because I can trade off types of beans and veggies depending on what is doing well in the gardens. At some point there is an abundance of tomatoes and zucchini. It is also very quick and easy...usually less than 10 minutes start to finish.
Courgette1 zucchini (corquette?)
It sounds really tasty.
if you like a spicier flavor just add a little hot sauce or salsa to the mixture.
refried beans
1 c dried pinto or black beans
4 c water
1 t sea salt
2 T olive oil
1 onion, diced
3-4 cloves garlic, minced
1/3 c diced green bell pepper
1 t shoyu
1 T rice or barley miso
1 T lemon juice
cover the beans with plenty of water and soak for 6 to 10 hours, or bring to a boil with 3 cups water, simmer 2 minutes, and soak 1 to 2 hours.
drain the beans and place in a 2 quart pot along with 4 cups fresh water. bring to a boil, cover, and reduce the heat to low. simmer for 1 1/2 to 2 hours, or until tender.
add the salt and simmer 15 to 20 minutes more. drain the beans, reserving the broth, and set aside.
heat the oil in a skillet over medium heat. add the onion, garlic, and green pepper, and saute for 3 to 5 minutes, or until the onions are soft and translucent.
add the beans and saute 2 to 3 minutes. stir in the shoyu and 1/3 cup of the reserved bean broth and partially mash the beans. combine the miso and lemon juice and add to the bean mixture. add more broth if the mixture is too dry. cook 1 minute more.
serve immediately.

I LOVE THEM!
I am so trying this today!!jamieoneill

A grocery store on the other side of town has a huge barrel of "rainbow bean mix" and it has at least 12 different beans in it.. i think there are some red lentils in there too.. but yeah, i love just cooking up a couple cups of beans and adding things like garlic, green onion, purple cabbage, and sometimes spinach or other veggies if i feel like it.. but then i always end up making a huge batch of it and eating it for like a week and a half. Heh, at least beans are suuuuuuuuuuuuuper cheap!!!
Personally, i don't like canned food. I haven't bought canned food since i finished off the last of my old canned stuff. I'd rather have dry, or fresh.. canned stuff tends to be mushy and salty and taste weird.
I quite agree. Canned food is vile.
I doubly hate that they put high fructose corn syrup in the tinned beans here. Beans do not need high fructose corn syrup in them.
It's vegan, which means it's vegetarian which means there's nothing unheathy in it. -- my guy trying to explain vegan junkfood.
I actually like canned beans. I just make sure I get ones that are just beans and water (sometimes salt is unavoidable). I'm just not interested in soaking beans and having to plan ahead.
Cheers,

I know! I sometimes find HFCS in the oddest foods!!!!!! It's scary what they put in food. I'm glad i don't eat stuff with huge ingredients lists.Kiva Dancer
Yes, me too. Very convient. Homecooking beans take such preparation and you have to plan in advance what you want to eat. Sometimes a chickpea craving happens at 1:00am and I need them NOW. I can't wait to soak them and cook them forever, so I use canned chickpeas.rantipole

I like my beans:
Baked beans - safe bet and still their flavour excites me
Refried beans - VERY tasty, and great with rice plus veg of your choice.
Kidney beans - Good but not my favourite.
Usually get them all canned.
Watch out for the baked beans. I don't know about where you are, but here in Canada a lot contain lard, pork fat, etc!
Peace, love, and happiness.
I know, isn't that NASTY? And now they have weiners and beans *gag* . I look out for cans labelled "Vegetarian Baked Beans". I've found at least 2 brands in Hilo, but not sure about Victoria...Tigerlily

No name makes a good can of baked beans. They even label them vegetarian.
Peace, love, and happiness.
most baked beans are veggie here.at least i think so..i cannot stand them unfortunatly!
ok so today, i have cooked a large panful of aduki beans.and now i havent a clue what to do next with them! i just ate a few in a salad...now what?!lol
Made this twice in one day, once for lunch, then i doubled it for dinner, and there still wasn't any left!jamieoneill
Easy and good, will be a staple in my house.
I can't wait to try the next recipe!!!
Oh, yeah, i know the japanese use adzuki beans in desserts a lot. I love bean paste buns!

Hey, cool! The other bean thing I like is black bean sauce, it tastes beautiful. You can just cook it with some vegetables of your choice, please yourself...
My husband and I just invented this recipe two nights ago and it's soooo good. Basically we needed to fix dinner with what we had and this is what we had lol.
Southwest Black Bean Casserole
1 cup water
1 cup cornmeal
chili powder, cumin, salt & pepper to taste
1 cup black beans
1 cup corn
1/2 package veggie crumbles (can be ommited if you don't do processed foods)
1 large jar of salsa
Combine water, cornmeal and spices in a saucepan and heat over med-high until it's thick. Spread mixture in the bottom of a baking pan and bake at 400 for about 10 minutes for crust. Mix beans, corn and crumbles and pour on top of the crust. Top with the jar of salsa and bake at 400 for another 30 minutes.
I know what I'm having for lunch today!!!ravenfire
Thanks everyone for the great recipes!

I bet Yoda was a vegan
Just had it, put 2 tablespoons of nutritional yeast in at the end for extra zing, turned out nice. Thanks for the recipe!

I have a can of kidney beans. Anything fun I can do it with it except for chili (which I don't like)?
Peace, love, and happiness.
You can make a burrito, or you can make a mexican salad (greens, beans, and other veggies) and put it in a taco shell...

I'd be more tempted to make a curry with them, but I just prefer curries An Indian place near me does a fantastic kidney bean curry!
I bet Yoda was a vegan
I don't know how to make curry. In fact, I never had curry before!
Peace, love, and happiness.
You're really missing out! Something easy to start with is something like dahl, then you can move on to fancier stuff if you like the taste. Don't forget the coriander!Tigerlily

yeah get a recipe and have a go it's easy and it's tasty. There are alll different types of curries from different countries. Thai curries are incredibly yummy.

My boyfriend's family is Sri Lankan, all his mom makes is curry. I'll be moving in soon, so I'm sure I can wait. Plus, it will authentic curry too. My boyfriend laughs at all the online recipes and calles them "whitie-fied" curries, ha.
Peace, love, and happiness.
Some have other influences in them, but I'm sure you can find authentic ones online, Manish has certainly posted plenty
I bet Yoda was a vegan
Nah, he'll make fun of me till no end. I'll just wait until I try his mom's cooking.
Peace, love, and happiness.
I have a pack of aduki beans and cannot think of anything to do with them. Does anyone have any interesting recipes they could share?
Thanks!!
You could make a garlicky bean dip. Or some chilli. Sprout them? (check if they're okay for sprouting though, I know you can't sprout kidney beans).

Are they the pre-cooked frozen ones?
I've only tried them in one thing so far - a cottage pie kind of thing. I made it from crushed mixed nuts, mushrooms, carrot, aduki beans, and onions. Seasoned with sage and basil.
According to the bag you can just use them wherever you would use mince.
"Danger" could be my middle name … but it's "John"
I just add them to stir fries and quinoa or put them withhummus!nothin exiting i am afraid.i am certain they are meant to be mega good for you!LOl
Thanks guys/gals,
They are dried, not pre-cooked. I actually have some Quinoa in, which I have had for a while but not got round to using. The dip sounds good too.
In one of my vegan cookbooks there was a recipe for an aduki bean crumble. Unfortunately I have no idea which cookbook & they are all in my parents loft at the moment.
It was basically aduki beans, a tin of tomatoes, various veg & seasoning, topped with a crumble topping which I think was just vegan marg mixed with breadcrumbs & some herbs. Then it goes in the oven for...a while!
Sorry to be vague! But it was very nice when I made it. Guess you could also add vegan cheese or nutritional yeast or something to the topping & it's a recipe that could easily be varied.
Good luck with the aduki beans!
Vicky

i made burgers with them once aswell if u like ill try remember the recipe i used.i think i basically mixed cooked aduki beans, grated carrot, stock, oil and rice...until they formed a substance whcihcould be formed into burger shaped things!
I had some last night just cooked in the slow cooker all day with an organic vegan boullion. They were really good alone.
Great idea for a thread! I have a packet of them sitting in the cupborad too, and have had no idea what to do with them.
Let me know what you decided to do with yours VeganJohn, and if it worked out ok.
I have them frozen and pre-cooked, so bear that in mind...
Cook mushrooms, peppers, aduki beans and peas in vegetable stock until cooked. Add some tinned tomato, parsley, mushroom seasoning and uncooked cous-cous and simmer until the cous-cous soaks up all the liquid and is cooked (you might need to add more liquid cos the cous-cous sucks it up)
Serve with flatbread and salad.
