    You could make Red Dragon Pie.

    Cook aduki beans with chopped red capsicum, a grated carrot, 1 chopped onion, 1 clove garlic chopped, 1 teaspoon minced red chilli or more or less to taste (really you can use any veg) add a can of tomato puree, 1 teaspoon fake chicken stock and simmer until cooked. You may need to add a little water. Add any herbs and spices you like.

    When cooked place in the bottom of a casserole dish and top with creamy mashed potatoes.

    Bake until browned on top. Yum

    And here's the recipe:

    ADUKI BEAN STEW WITH MILLET MASH
    200 gms aduki beans
    1 stock cube of choice
    1 onion chopped

    1/2 teaspoon cumin
    1/2 teaspoon tumeric
    250 gms kale
    4 tablespoons fresh chervil

    Boil beans 15 mins drain and rinse.
    Return beans to a pan of cold water and cook a further 10 mins. Lower heat and add veg and spices and simmer 15 mins.
    Add kale and cook for a few mins until tender.
    Srinkle with chervil and serve with millet mash and onion gravy.

    MILLET MASH
    100 gms millet
    pinch sea salt
    1 onion finely chopped
    1 cauliflower cut into florets.

    Wash millet and drain well. Simmer 20 mins in salted water.
    Cook cauliflower and onion in pan of water 5 mins, drain and mash.
    Add millet and mash together. Serve warm.

    Delicious. Does anyone know how many cups there are for those grams? We don't use that measuring system here and I wouldn't know how to measure it!

    i didnt add the chilli sauce as i didnt have any. i had french bread cut and dipped in olive oil then grilled, with mixed herbs on one side and popped ontop of the stew, it was very nice

    Some excellent ideas for aduki beans, I reckon I will get round to trying some of them during the week.

    I always though 1 cup was equal to 225 grams? So, yes, 250g could be seen a being a 'large cup'.

    Always confusing when I see 'cup' written though.

    Ahh, over here we don't call them cups or large cup. A cup over here is 250ml...is that the same as 250g?

    Actually 250ml is probably more accurate, as a millilitre is used to measure a volume of something, whereas grams are used to measure a mass of something.
    I think this is where the confusion arises, as cup seems to be universally used in cookery books as a way of measuring out ingredients., with no units of measurement.

    I could just be talking nonsense of course......

    Just estimate Tigerlily. It doesn't really matter whether you're exact with beans. If you buy 250gm pack just chuck the whole lot in. If your using small tea cups to measure I would put 2 cups in, it depends how many you want to feed. Or just measure 1 big mug or a breakfast bowl full. If you use more just add more liquid and stock. Just have a go and experiment.

    hi everyone! i wondered if anyone could give me any good recipies for butterbeans(lima beans)? i really love them but am struggling to find recipies which include them. my local vegan cafe does a lovely pumpkin and butterbean stew...anything similar? ta! triona

    they are great for salads! and you can make a great spread if you mix cucumber, tomato, lemon, a bit of soymilk and some salt and pepper, and then mix it in a blender/foodprocessor

    I use them in fahjitas, if I ever have one of those Old el Paso fahjita kits instead of the meat it suggests use butter beans and sliced mushrooms. I don't even like cooked mushrooms but I do like them in that. I'll try and remember what the recipe is so you don't have to buy a whole kit.

    Butter beans are great. They have this really smooth texture and taste. Kinda like butter....I guess that's where they get their name????

    I tend to just open a can and eat them...when ever I just can't stand the thought of cooking. Very easy to cook though.

    I never thought of using them as a spread but now that I think of it they would be very good in one.

    I sometimes dress them up with a can of crushed tomatoes and some spinach thrown in. A little garlic and onion for some flavor and a little dried red pepper for some heat. I still don't own measuring cups so I never measure anything.....go by taste and smell mostly.

    is a butter bean a lima bean?

    My grandmother always ate lima beans and they were green and tasted awful to me as a kid.

    I thought butter beans were something different...aren't they more brown and creamy tasting? Maybe I like lima beans now and don't even know it!

    Butter beans are limas. In my experience they are larger and tan in color than those little green ones though. I buy them either dried or canned. I believe they are mature limas that are left to dry....but I could be wrong.

    Yeah, butterbeans are whit, similar shape to kidney beans, but bigger and flatter. They are lovely. Beans all taste the same when you first start eating them, but then they begin to have their own flavours. I love butterbeans. The book "A Vegan Taste of India" has a gorgeous recipe for butterbean, sweet potato and peanut curry. It is absolutely delicious

    Butterbean Mash

    410g can butterbeans
    2 garlic cloves
    1-2 tablespoons lemon juice
    4 spring onions, chopped
    2 tablespoons chopped parsley
    salt and pepper

    § Drain beans
    § Reserve liquid
    § Mash beans with fork / potato masher
    § Alternatively put beans into blender
    § Blend until smooth
    § Put mashed beans, garlic, lemon juice, spring onions and parsley in to a saucepan
    § Add enough reserved bean liquid to make mash consistency
    § Season with salt and pepper
    § Heat gently

    Haven't tried it yet but bought some butterbeans to try it...

    Mmm, some of these ideas/recipes sound yummy! I quite like butterbean, tomato and basil soup. They are quite nice in pasta sauces aswell as they soak up some of the juices

    Gigante (Greek Giant Beans) - Fry onion & garlic in lots of olive oil, add a can of tomatoes and a can of butter beans and fresh dill.

    fry soem chopped onion n a few finely chopped bits of tomato..blend a can of butterbeans,if they are too bullky to blend,add water..add these to the pan...add parsley,pepper,any herb you like.I love putting this in wraps or eating where mashed potatoes would usually be!

    Food For Friends in Brighton used to (and maybe still do) make a mayonnaise from butterbeans - I believe they blended it with oil and vinegar (and maybe some garlic) and then they'd mix that in with cooked potatoes and spring onions (scallions) to make potato salad - I think that was the first potato salad I ever ate in a restaurant as a vegan

    Hey, as one who enjoys beans in his burritos and such, I have no idea as to how to cook them. Would anyone care to explain the process? I read the back of a kidney beans packet, and it was really confusing, I am kind of intimidated now. Thanks!

    Nothing to be intimidated about although it takes a bit of forward planning!

    If you want to cook dried ones, you need to soak them overnight (or for several hours), rinse, boil fast for ten minutes, then change the water and simmer until they are tender, which can take an hour or two depending on the type of bean. The boiling stage is meant to be especially important for kidney beans which can contain toxins otherwise.

    Red lentils don't need soaking and cook much faster, in half an hour or so. Otherwise, there are always canned ones!

    If you do prepare dried ones, which are more economical and (I suppose) more eco-friendly, you could do a large batch and freeze what you don't immediately need.

    I have a similar method.

    First, soak the beans. Either soak overnight (8 to 12 hours) in lots of water or "power soak" by putting the beans in a large pot of water, bringing to a boil for 2 minutes and then letting them soak in the same water for one hour. Drain the soaking water.

    Next, in a large pot of water, bring the soaked beans to a boil, then simmer gently (don't boil!) for 45 minutes to 1 1/2 hours depending on the beans. Do not add salt or anything acidic while the beans are cooking or they will be tough (you may add onion, garlic, bay leaf, kombu). Older beans take longer to cook than newer beans (you don't know the true age of the beans you are getting unless you're fortunate enough to live near the bean farmers).

    Here are some basic conversions:

    1 cup dried beans = 2 to 2 1/2 cooked beans

    Soak with water to cover 3 inches over beans or 4-5 cups water per cup beans. If it's very warm, you may want to soak in the fridge to avoid your beans fermenting.

    Some methods are also to power soak (boil the beans for 2-3 minutes) and then let them stand for 2-4 hours rather than the 1 hour I mentioned. I really think it depends on the age and size of the beans.

    Cook the beans in 3-4 cups water for each cup of beans. For larger or older beans, you may want to boil them for 10-15 minutes before letting them simmer. Oh, and stir often.

    Really, it's like cooking pasta a bit, just with added soaking time.

    Thanks. Dried beans are much cheaper than canned but I've always been put off by the cooking. It doesn't seem hard at all.

    I hope you'll give it a try, Tigerlily. It's easy on your wallet and the environment (so much less packaging!) If your mom has a pressure cooker, you might also some day try canning them. I take a day about every 3 months and just can a bunch of beans. It's really not hard after you do it once or twice. And the beans are soooo much better than any you buy in a can!
