    Default Fresh garlic

    I'm just about to start harvesting mine .... most of it will be dried (like the stuff you buy in the shops) .... but I'll use some of it fresh.

    One thing I'll use it in is potato, sweetcorn and prune salad in mayo (tastes so much nicer than it sounds). I'll also roast some to spread on crusty bread.

    But I'm looking for other ideas while it's still fresh ... what would you use it one?

    making panne tomate (sp??) - make some fresh bread and then slice it and rub garlic over the slices and add some tomatoes.

    is it safe to eat wild garlic straight from the earth - eg the stuff that grows in woodland?

    How about skordalia - a Greek form of aioli without eggs?

    There are a lot of recipes around (some based on bread, some based on potatoes, and with/without walnuts) e.g.

    The one I used to make had bread but no potatoes, and did have walnuts

    Yes, wild garlic is safe to eat. But never, never eat anything you don't know intimately, or have identified successfully from a book. And with anything new.... try a tiny bit..... then another little bit 24 hours later ... to avoicd extreme reactions. (Don't do that with mushrooms or berries though, as some of them are so powerful)

    I love free food from the wild.
