    Default Leafy green veggies

    I'm a little confused about what leafy green vegetables really are. The ones I hear about are spinach, chard, kale and asian green vegetables like bok choy and gai larn. But what about salad and lettuce types like arugula, frisée, romain and iceberg? Do these also have a lot of calcium and iron?

    Except for iceberg, I think they all have good amounts of nutrients.

    iceburg is gd for hydrating but generally the darker the leafy green the better .

    spinach
    pak/bok choi
    kale
    cabbage
    romaine lettuce
    chard

    all good!

    Another good one I think is parsley - people tend to treat it as a garnish but if you have a reasonable quantity, like in tabbouleh (yum!) I believe it has valuable amounts of calcium in it.

    parsley also has a lot of iron.

    Brussels sprouts are also leafy greens, they are little cabbages really. I keep some in the freezer. They are very high in vitamin K. They make a tasty soup.

    I looove brussels sprouts. Yum! I had lots of bok choy today. Yum also.
