I've struggled to make vegan muffins for a while now, with recipes that haven't raised enough, have raised to much, falls apart etc. But yesterday I made my first batch of completely succesful muffins! Here's the recipe (makes 9 large muffins):
4 dl white flour (I used gluten free flour mix)
1 dl sugar
4 tea spoons baking powder
3 dl soy milk
0.5 dl soy oil
1 large banana, mashed
100 g dark chocolate
Combine the dry ingredients in a mixing bowl. Add soy milk, oil and banana. Mix well. Pour into large, stiff paper muffin cups (I've made the mistake of using the smaller, weaker cups, and having the batter flow out onto the oven tray), about two thirds full. Break the chocolate into pieces and stick into the batter. Bake at 175 degrees celsius for about 30 minutes. Cool on a rack and enjoy!
