I'm always up for trying new things and today found some fermented tofu in a chinese supermarket. It's in a jar and looks terrible (almost black). The top of the lid is bulging and Cherry wondered whether the seal was broken and it had gone moldy. You can even smell it with it completely closed up.
Apparently this is quite normal. Reading up however there seem to be lots of references about it being made with things like fish brine. The ingredients on the bottle are all vegan (hence the reason I got it), but now maybe I'm slightly paranoid.
Is there anyone who buys this stuff regularly and can vouch for modern manufacturing techniques of it not involving rotting flesh?
