The main ingredients, although I just kind of made it up as I went along. Tasted pretty good (not that I can remember what the real eggy version tasted like).

Yum! I love foccacia. I don't have the patience however to make it very often and the range of ones available in supermarkets at current is rather crap. Waitrose used to do an amazing trio of focaccia (1/3 sundried tomato, 1/3 olive, 1/3 herb), which they replaced by something uninspiring and unvegan.

Mmm, I'm hungry now. Great photos too, Mr F. It always seems to be dark when I have food to photograph. Anyway, here's my florentine recipe:
5tbs caster sugar
75g margerine
3tbs plain flour
75g flaked almonds and chopped pecans
25g chopped mixed peel
25g sultanas, chopped
25g dried cherries (chopped)
100g chocolate
Traditional florentines use glace cherries, but all the ones I've seen have cochineal in them, so I used dried ones instead.
- Heat oven to gas mark 4 / 160c.
- Grease and flour a baking sheet.
- Heat margerine and sugar in a large saucepan until sugar is completely dissolved.
- Mix in the flour, then add the nuts, peel and fruit.
- Place teaspoonfuls of the mixture, widely spaced on the baking sheet and flatten slightly. (Make 2 batches unless you have a huge oven.)
- Bake for 10 minutes.
- Leave to cool on the tray for 2 - 3 minutes, then slide a knife under them to lift them off and put them on a cooling rack. They tend to stick to the tray, so don't leave them too long. It also helps to gently push the edges in with a knife as soon as they come out of the oven.
- Melt the chocolate in a bowl over a saucepan of boiling water.
- Spread the chocolate over the flat side of the florentines.
Thank you and thanks for the recipe - I'm not sure i've ever seen glace cherries with cochineal in The latest tesco list has their glace cherries down as being vegan.
I very rarely have the luxury of natural light in my photos. I have a 3-head studio lighting kit, but it's a pain in the ass to set up for kitchen snaps, so I rarely bother.

I made a really indulgent (and scary) hot chocolate.
I used clipper drinking chocolate and sainsbury's sweetened soya milk. I also used a dorset naga chilli (1 million scoville heat unit chilli, the strongest chilli in the world)
So I heated a pan and added the chilli which I had chopped finely until the fumes become painful and then added a pint of soya milk (my mug is about a pint) and whisked it to a foam as it heated. I then carefully poured the fluid part of the milk into the mug (letting any chilli parts flow in of course) I then added about 8 spoons of the chocolate and couple of sugar and stirred it up, I topped it up with foam and stirred that so that chocolate mixed with it but it continued to float. Next I floated more foam on top of it and then sprinked more chocolate on top covering it an dusted with cinnamon.
Served myself with bourbons for dipping.
It was delicious but could easily be used as a form of torture or for making people be capable of consuming food that is quite hot as it burns quite a bit but is so delicious that I couldn't stop drinking it. Afterwards I felt quite happy indeed, I may have just had a years allowance of theobromine and capsaicin but it was worth it.

I'm kind of chuckling to myself tonight. I've only been a vegan now for a few months, but I can remember once asking a vegan many years ago if all they ate was vegetables? I didn't know any better back then. In the past few months I have picked up a gambit of recipe books and I'm going crazy in my kitchen coming up with the most amazing dishes of food I have ever eaten!! I can't even imagine eating meat ever again!! I've also been pouring over the recipes and photos on this forum for the past few months and have come to realize that if nothing else.. vegans LOVE to eat good food! NEVER stand between a vegan and their food or you may get run over!! haha! The cool thing is that I've lost weight and have never felt better. I no longer count calories, but just eat healthy and enjoy plenty of good food. This has been one of the most liberating experiences of my life!!

sheesh, i luuuuurve stew and dumplings (the rest of th family aren't too keen on them!) - and this looks so good - just one thing, i like to add pot barley to stews to thicken and give it that savoury flavour!! good
