i didn't make the lo mein, but could prob get recipe to you later.
just now found lima bean recipe here.
It seems complicated, but I just used a can of regular lima beans that i had in the cupboard instead of messing with soaking and cooking the dried ones. didn't use bay leaves or mint (didn't have any) and I also did not bake it... just simmered a little longer to thicken. It was really tasty anyway... and easy.

Stuff I ate in the course of my gluttonous odyssey around NYC on the day of the veggie pride parade:
Tofu scramble wrap, "buttercream" cupcake and soy chocolate shake at Snice on 4th Street:
Oreo and Chocolate Soy Soft Serve Sundae at Lula's In Brooklyn (I think):
My friend's cake batter soft serve sundae at the same place:
So good!
That food looks gorgeous Russell especially that sundae.
It was all so good. We were overwhelmed by the sheer amount of vegan options in the city. It was rather difficult to get on the train and leave, both because we regretted leaving the profusion of culinary options behind and because ..well..it was physically hard to move after gorging ourselves so thoroughly with delectable vegan goodies!
Russell, those sundaes and the breakfast wrap and cupcake look delicious!
Here's some things I have made lately:
Eggplant, Chickpea, and Olive Gratin over couscous from The Mediterranean Vegan Kitchen
Cashew Pineapple Quinoa Stirfry from Veganomicon
Spring Vegetable Risotto (The Mediterranean Vegan Kitchen) with steamed asparagus
Vegan Mac and Cheese (veganyumyum.com) with bbq tempeh and asparagus
Raw Coconut Cream Pie (Ani Phyo)
tabbouleh-bouleh
My food isn't very presentable *clumsy dyspraxic spooning of food lol!*

Vegan pizza (so easy to make with puff pastry)
The vegan dessert was muesli chocolate cakes and dipped strawberries
I've got photos of the buffet spread but they contain non-vegan items so I wasn't sure whether people would want to see them.

All of this food looks so delicious!
Here are pictures from me and my boy's first attempt at sushi rolling. We certainly learned one thing- the less rice the better!! Hopefully we'll get the hang of this...
doesn't look bad for the first attempt at all! I've been making sushi for 3 years and am still unable to do inside-out rolls.
Hey, thanks!! I definitely need to get the rolls tighter. I didn't even think about rolling them the other way. Is it much easier??
it is easier, but then the yucky nori is on the outside.
I love making sushi, but inside out is the way to go.
Each snowflake in an avalanche pleads not guilty.
Mmm sushi! I want to try making inside out ones too.
