This is my vegan spicy lasagne, just made it up as I went along, it was good!
Chocolate cupcakes with chocolate ganache and peanut butter frosting on top - yum! (I rolled balls of the leftover ganache in cocoa and made good truffles!) This was from "Vegan cupcakes take over the world".

Those cupcakes didn't last long, I tricked everyone by telling them it was vegan after they'd eaten them, so it was an unbiased tasting! Everyone loved them...next I am going to veganise my favourite chocolate cake recipe.

Yep sure! For the veggie sauce I softened onion and garlic in olive oil and then added sliced courgette and mushrooms, chopped red and yellow peppers, 1 tin of chopped tomatoes, 1/2 tin baked beans, 1 tbsp sun dried tomato puree, oregano, and 2 sliced birdseye chillis (seeds left in!), and simmered it while I made the 'cheese sauce'.
For the cheese sauce I melted 2 oz vegan margarine and a little olive oil, then added 2 oz flour, mixed well, cooked for 30 secs then slowly whisked in 3/4 pint soya milk, a little at a time, until thickened and smooth. Into this I added 1/2 block silken tofu and 2 tbsp nutritional yeast.
I used wholewheat lasagne sheets, and started with a veggie sauce layer, then lasagne sheets, then the cheese sauce, more veggie sauce, more lasagne sheets, and finished with a layer of cheese sauce. I put sliced tomatoes on top, sprinkled oregano on top, then added some slices of Redwood mozzarella style melting soya cheese, baked in a 190 C oven for 30 mins, and voila!

Yay, it's good! Mine was a little bit runny so I will say watch how much 'juice' goes into the veggie sauce, maybe strain the tinned tomatoes a little

Breakfast tortilla...wheat tortilla wrap filled with fried potato cubes, mushrooms, onions, and ketchup! Not exactly healthy but good for a treat
Vegan cottage pie...my OH made this for me, it was really spicy!
French bread pizzas, split french stick with sun dried tomato puree, garlic, onion, yellow pepper, halved cherry tomatoes, mozzarella style melting cheesly, and oregano. Super yummy!
Vegan chocolate cake..sooo good, I veganised this from a regular recipe, the secret ingredient which makes it really gooey and moist is...beetroot! (Grated raw into the mix)

we've had really unseasonable weather here in southern France .. .a week of rain in August is absolutely unheard of! ... ... so some warm comfort food was in order

WOW!!!!! Toffo, that cake looks fabuloso! What is the white frosting made from?
Gwydion, I made it up as I went along, using up what I had in the fridge.
Saute up onion and diced veg (I used a carrot, some French beans and um, can't remember, maybe some sliced red pepper.
Chuck in some Puy lentils (or plain green lentils) along with some stock (you could use a splash of wine if you like as well as stock) and some herbs (I used dried herbs de provence).
Cook it all a minute or three, stir in some tomato puree and cook another min, then tip into a dish and top with sliced potatoes (that have been par cooked) and some tomatoes and courgette, or whatever else you need to use up. SPrinkle with some herbs.
Pop into the oven at about 180 degrees and bake for about 20-25 minutes.
Anyway, back to that choccie cake!!!

Normally I use firm tofu and vegenaise, but no vegenaise here, so this time I used: silken tofu, lots of mustard and soy sauce, celery, scallions, relish, turmeric, and baby dashes of curry powder, coriander and garlic powder.
Hahaha, moist it was. Perhaps runny, if you will. I put in too much soy sauce...

do you silken tofu erin? how did you make it? i'm still trying to perfect the tofu scramble - i like it moist like real egg, not dry.
bexi - that beetroot cake it soooo good, it's from the "cook yourself thin" programme, which is decidedly non-vegan, but I changed the honey to light agave nectar, and the eggs to egg replacer, and made sure I used dairy-free dark choccie, and it tasted the same, so rich and decadent! I didn't frost it, it doesn't need it. Also I cooked it for 1 1/2 hours, not 2.

Yesm, the orig. recipe is by Dreena Burton - http://viveleveganrecipes.blogspot.com/ - but I use brown rice flour instead of wheat flour. I leave out the cocoa to make the white ones but I have made them w/ cocoa before, just as good. I also add a bit more oil or maple syrup to get the dough at a good texture ie. not to dry. Oh and I find you can leave out the agave if you don't have any on hand, but being a rawbie you probably have some! And obviously I leave out the mint choc. in the white variation!

Thought i'd share these with you, as was a luscious meal: I've arrived back at my parents for a while as they are moving from old family house, and as i walked through the door i found my dad (the one man who did not understand my veganism) was cooking up a vegan lasagne for us to have. Roasted vegetables and a nice attempt at a vegan white source using free & easy cheese mix with fake parmasan sprinkles! Not only was it yummy but i was so unbelievably happy he had made such an effort.
