Wow, I haven't been on here in a good long while! I just moved into a house with a friend of mine and school just started, so it's been pretty hectic. I've got a few things here, nothing fancy, just tasty food I made:
A1 Tofu "steaks" with couscous and steamed cabbage
Chickpea cutlet with mustard sauce, a sweet potato and salad
"Mexican" fried tofu with vegetable rice, Frito scoops and salsa
Pita with veggie burger, romaine, purple onion and BBQ sauce, brown rice, veggies and a sweet potato
(sorry for the weird angle lol)

ok, here's a buffalo seitan sandwich with vegenaise bf made (really really delicious). collards with spinach, celery, onion.
hummus in sun dried tomato wrap with avocado, lettuce, sprouts, onion. really needed some tomato for color!
sweet and sour meatballs, ww spaghetti with marinara.
cheddar broccoli soup with rice noodles and garden burger chicken griller. soup made with nooch and melted fyh cheddar.
pizza! gimme lean sausage, fyh jack, mushrooms, onion, peppers, topped with fresh basil and marinara (not pictured)

i've only started looking at this thread today as i was struck down with a dose of the sickness and dia...etc...and couldn't face looking at food.
but today - yum yum.
i now fancy vc's soup with pxs doughnuts. although i probably should eat some bland food for a day or two. i'm attempting a little yorkshire pud with carrots, brocolli, parsnip and spud today - baby portions though.

tahini lemon rice and beans (recipe from veganyumyum.com) with baked tofu
shepard's pie with gravy (chicago diner cookbook), green beans

Raw Zucchini pasta w/ pine nut cashew pesto, topped w/ avo & tomato
This is the pesto recipe, only I had no pistachios so I used pine nuts & cashews. It was yummo!
