Yes it is a tiled table, I quite like that dining table actually even though it isn't being used and has the TV on it at the moment.
This was my Yule lunch ..... chestnut, wild mushroom and sweet potato cakes, crispy roast potatoes, maple glazed roasted carrots and parsnips, steamed sprouts with chestnuts sauteed with garlic, steamed sweet cabbage, bread sauce, cranberry sauce and Madeira gravy.
I was almost too full for seconds!!!
and leftovers next day .... the cakes with bubble and squeak and home-made baked beans in tomato sauce

Mr Flibble gave me this recipe for the satay sauce, cook it as you would a thai curry, with 6 spring onions, 1 pack green beans, 1 red pepper & a pack cauldron marinated tofu
1.5 tbsp Red Thai Curry Paste (ensure you buy a vegan one)
3 tbsp Sunflower Oil
400ml Coconut Milk
65g Demerara Sugar
150g Salted Peanuts
3 tbsp Rice Vinegar
Grind (using a food processor or pestle+mortar) the peanuts and add to the rest of the ingredients in a mixed bowl, minus the oil and red curry paste which you heat in a wok for a few minutes. Add the contents of the mixing bowl to thw wok when the paste has cooked and heat for 15-20 mins. Remove any excess oil from the top whilst it cooks, then serve.

Cornbread muffins look nice. (well it all looks lovely!!!). Recipe for them?
For the cornbread muffins, you just whip up a cornbread recipe and pour it into a muffin tin. If you’ve never had cornbread before or never made it, it’s super easy. To me, little bready things like this are the most easily manipulated and customized things you can cook, so I don’t really even follow a set recipe, I just kinda guesstimate the ingredients and mix them up until the batter looks right, and then bake them for 10 to 15 minutes. Here’s an approximate recipe for you though:
1 cup cornmeal
1 cup flour (think in the muffins I posted above I used half regular flour and half whole-wheat)
An egg replacer of some kind, one or two eggs worth (I think I used ground flaxseed for the muffins I posted above, but I may have used EnerG Egg replacer. Flaxseed definitely adds a little nutty flavor)
Some sugar (any kind will do, some people like their cornbread sweet, some don’t. I like it just a little sweet but not dessert-like)
About a cup of soymilk or some other kind of milky liquid, water works too, but the cornbread may be more crumbly
¼ cup canola oil
A little salt
2 to 4 teaspoons baking powder
A tiny bit of baking soda
Those are the essential ingredients. I prefer using cornmeal, but you can use cornflour, it just won’t have that slightly grainy cornbread texture. I’ve also heard you can use polenta, but I’ve never used it in anything, so I’m not sure how that would differ. I know from living in Germany and traveling in the US that cornmeal can be hard to find outside the southern US, but I’ve always managed to find it. Also, some people like to mix in whole corn kernels or chopped jalapeños to their batter. If you want softer, more bread-like cornbread, increase the ratio of regular flour to cornmeal, and likewise if you want grittier, cornier cornbread, do the opposite.
Mix all the ingredients together until the batter is smooth but don’t do it too long, then pour into muffin tins and bake at around 425˚F for around 20 minutes. If you jab a toothpick into one and it comes out clean, they’re done. Some people like their cornbread slightly burnt, so if you’re into that, go for it J.
Another cool thing to do with cornbread batter is to make hushpuppies, you just take spoonfuls of batter and drop them into boiling hot oil and let them deep-fry until they’re brown. Hushpuppies are awesome, but not low fat lol.
Cornbread goes great with chili, and I make a mean chili lol. To me the slight sweetness of cornbread really compliments the fiery heat of a spicy main-course. Cornbread is traditionally a staple here in Texas. I grew up with it, made it countless times and mixed it up with all kinds of crazy stuff. Just play around with it until you come up with the right mixture, you can’t go wrong.

My x-mas lunch was quite traditional, I think I might make a nut roast or something different next year for Yule/ x-mas.
The table with the food, I forgot to make stuffing. My husband had the non-vegan yorkshire puds.
My plate, the "cheese" sauce on the carrots came out really clumpy and the maple roasted parsnips stuck to the pan and I couldn't get them off.
This was my boxing day brunch, leftover roasted brussel sprouts, tofu scramble with chestnut mushrooms and onions, peanut and celery salad, sos roll, hash brown and cranberry sauce

forgot to take pic of my xmas dinner. mom let me veganize her scalloped potatoes and candied yams. dad made brussell sprouts dish with earth balance and even made me a special vege ham (whole stack of ives) with the same glaze they put on their poor roasted pig (ham). plus there was corn and a big green salad with mushrooms, red onion, beets, carrots, imit bacon bits and kidney beans. I'll insert pic later when i have leftovers.

Thanks BC the chestnut roast en croute is easy to make - Its from the Rose Elliot vegan cook book. I made the filling in advance and brought the frozen puff pastry to save time.
The chilli was nice, I was the only vegan at the christmas meal at friends but they made everything vegan chilli had beans and veggi mince in.

Christmas Eve dinner for me was a casual affair. Had a "leftovers" sandwich on homemade multigrain bread with tofurkey slices, spinach, cream cheese and cranberry sauce. The pic from that night wasn't so good, so here's one from a few nights before, also with pickles and red onion. So good.
