tonight was blackbean burgers w/sauteed and peppered mushrooms and onions along with tomatos and the other usual stuff and a sweet BBQ sauce (w/maple syrup as the replacer for honey).
this was my first shot at making these - so for my wife to say they were the best she'd ever eaten was quite a compliment.
...i would imagine she was saying that out of marital obligation though
250g plain flour
2 teaspoons baking powder
Half-teaspoon bicarbonate soda
2 tablespoons cocoa
175g caster sugar
150g chocolate chips (plus more for sprinkling later) - I use big chunks
250ml milk
90ml vegetable oil
1 tsp egg replacer or 1 mashed egg (I did half and half
1 teaspoon vanilla extract
Preheat the oven to 200C and fill a 12-bun muffin tray with paper cases.
Weigh out the dry ingredients into a large bowl. Pour all the liquid ingredients into a measuring jug.
Mix both together – it will be a runny batter - then spoon into waiting muffin cases.
Sprinkle more chocolate chips on top then cook for 20 minutes or until the muffins are risen and springy.
Makes 12 (or lots more if you use small cases)

I've just made some tangy mincemeat for pies ... with cranberries, tropical fruit, nuts and booze.
Let's see how long I last before making mincepies .. . the sooner I make them, the sooner they get scoffed!

It's nothing fancy like some of the stuff on here but basil and herb soaked, fried tofu slices on alfra and brocoli sprouts with mayola and burger relish was soooooooooooooo amazingly good!

Here's what I did with my Sunday...
Burger buns, made the old fashioned way.
They took FOREVER to rise all three times. Next time, bread machine dough it is. They ripped apart really nicely though.
Next I attempted the VWAV veggie burgers. I say "attempted" because they didn't turn out so well. First try at frying them:
Yeah, that was gross. I think my mixture was too wet? Anywho, the oven was already on, so I baked the rest:
Still mushy, but edible at least. I just pretended it was a sloppy joe. With VWAV sweet potato fries:
Split pea soup. So ridiculously easy, and so good.
And lastly, spaghetti sauce. There's mushrooms & some tvp left from the veggie burgers, and fresh basil.
Well, here's my Yule lunch .... Pecan and cranberry roast, roasted parsnips and potatoes with onion and cherry tomatores, sprouts (hubbie loves 'em), slow cooked red cabbage in red wine, cranberry sauce, bread sauce and gravy....

Vegcurry, That seriously looks like the best Christmas dinner, it looks amazing. I looked at that pretend turkey and sausage bacon thing in a shop last week and didn't get it 'cause I wasn't sure if I'd like it and it was also for my omni husband and he's fussy. So was it really nice? it looks it.

heres two of my creations- both firsts for me! my first attempt at making vegan sushi and my first EVER pizza since going vegan. Both tasted alot better than they look! Sushi had inside nutty tofu, sundried tomato, various sprouts like alfafa, cucumber and wasabi paste then i covered it in soy sauce mmmmmm. Pizza had cheezly, tomato, sweetcorn, pineapple and basil. oooh im hungry now... not good at nearly midnight... tempted for a little midnight feast... ahhh rubyduby i want those spring rolls!!!!!
