What recipe did you use for the icing? it looks like the perfect consistency - mine tends to be too runny.. and is that just melted chocolate or is it a sauce that stays runny?

Thanks Clare The icing is just pure, icing sugar, vanilla and soya milk. No quantities I'm afraid as I just did it by 'eye'.
The sauce is chocolate ganache from Vegan Cupcakes take over the World, so it stays nice and soft (basically heat 1/4 cup soya milk and 2 Tblsp Maple Syrup, but I used golden syrup, to boiling point, take off heat and stir in a chopped 100g bar of chocolate and whisk until melted).

Thanks PI, I should start doing icing by eye, i always trust recipes too much! Ooh and thanks for the choc ganache - I got Vegan Cupcakes for xmas and have only just got a cup measure so will give it a try next weekend!

I made pie for the first time ever! It is sooo lovely - I got the recipe from Pennys blog... its got lots of veggies and sausages with a cider sauce nomnom. My photography skills arent up to much but...
EDIT: why do my photos always come out MASSIVE?? Even after I make them smaller on photobucket.... EDIT2: it seems to have gone to a normal size now.... how odd...

Cauliflower and mushroom pie my friend made me last weekend - it's fab, the gravy is all contained in the pie somehow!
He also made me an individual plum crumble for dessert
Also I made a Spinach, corn and nut pie for my Sunday lunch recently.

That pie looks great! Please tell me you can get the recipe for the crust from your friends! I've been trying to come up with a good vegan crust that will hold together like that but no luck so far. We've been doing the olive oily crusts and they just don't seem to work that well.

He is such a good vegan cook, though sadly since splitting up with his vegan g/f he is now only veggie.
The pastry recipes for both pies pictured are adapted to make them vegan.
The pie pastry I use is a hot water pastry, like pork pie pastry, from a Vegetarian Society cookbook - I can list that recipe but no-one seems as impressed with my pie! (Actually my friend used to make that pie and it was so good I started making it.) You just push the pastry into the cake tin base, no need to roll it out except for the lid.
His pastry in the cauli and mush pie did not taste so nice in my opinion but admittedly it did keep all that gravy inside, except where it bubbled out on the lid a bit. I know it is a Colin Spencer recipe and is from this book (which is not a veggie book).

They looked such a similar shape I presumed it was the same pastry recipe. I've never thought of doing such a deep pie in a cake tin. Didn't the pastry at the bottom go soggy with all that gravy in the mushroom one!? I've been thinking about pie a lot recently, and what the ideal vegan pie filling would be, but haven't thought about it enough yet.
Thanks Cherry! Yes both are made in a spring sided cake tin, so you don't break it up trying to get it out. Very impressive looking I think.
In the same recipe book at the spinach, corn, nut there is a mushroom one - very tasty too. What I like is that you can make the filling ahead of time. I reckon you could put any filling into those pies.
The cauli pie pastry was a bit more crumbly but didn't go too soggy on the bottom. Obviously the sides and top stayed crispier. (I still have some in the fridge as he let me take the leftovers home!)

On the one hand I like vegan people who don't eat leftovers as I can raid their fridge! On the other hand to find food I could have nicked rotting in the fridge when I've not been round in a while is very painful for me!!

i made this today.... rarg! haven't had the heart to cut him up yet though.
