Tonight's tea was Tempeh 'Wingz' with crushed new potatoes with chilli and lemon 'butter'. Twas my first foray into Tempeh....not entirely sure I'll have it again (the sauce on the wingz was excellent though, next time I'll use tofu)...and the new potatoes with the chilli and lemon were deeeelish!

This is the lemon bar recipe (copied and pasted from PPK)
Crust:
1 3/4 cups all-purpose flour
2/3 cup powdered sugar
1/4 cup cornstarch
1 cup non-hydrogenated margarine
Filling:
1 1/3 cups water
3 tablespoons agar agar flakes
1 1/4 cups sugar
1/8 teaspoon tumeric
2/3 cup fresh lemon juice
3 tablespoons arrowroot powder
1 tablespoon finely grated lemon zest (from two large lemons)
1/4 cup soymilk
Extra powdered or confectioners' sugar to decorate finished bars
Preheat oven to 350 F. Lightly grease a 13 x 9 inch baking pan.
Pulse flour, powdered sugar and cornstarch in food processor. Add margarine in spoonfuls and blend, 8 to 10 seconds, and then pulse until mixture resembles coarse meal. Sprinkle mixture into prepared baking pan and press firmly into an even layer with slightly raised sides to hold in the filling. Refrigerate for about 30 minutes and then bake for 40 minutes; remove from oven and let cool. Meanwhile, prepare the filling.
In a sauce pot, soak the agar agar in the water for 15 minutes. Meanwhile, zest your lemons and squueze your lemon juice. Mix the arrowroot into the lemon juice to dissolve.
When the agar has been soaking for 15 minutes, turn the heat up and bring to a boil. Boil for about 10 minutes, or until the agar is completely dissolved. Add the sugar and tumeric and boil until dissolved, about 3 minutes. Lower the heat to medium and add the arrow root and lemon juice mixture, then add the lemon zest and soy milk. Wisk constantly until the mixture thickens, about 5 minutes. It should not be rapidly boiling, but lowly bubbling is ok.
Pour the mixture into the prepared crust, let cool for 20 minutes and then refrigerate for at least 3 hours, until the filling is only slightly jiggly and set. Use a sifter or a fine mesh strainer for sprinkle the bars with powdered sugar. Slice into squares and serve.

Yes the curry was good thanks, I always worry with takeaways but have found one place i stick to where ive had long chats with the manager so the chefs now know what a vegan is!

I'd better not try them because they look far too neat to be screwed up by my tasty-but-ugly baking skills.
They're dead simple....it's just a bit long winded with all the chilling and whatnot - definitely worth it though (FWIW, even though I have some measuring cups, 9 times out of 10 I just use a mug)

Sinarei,that rice pilaf/salad looks really nice. I think the reason your brother likes it because It doesn't look like someone tried to "veganized" a meat based dish where one always feels "something is missing" but this looks more like an ethnic based recipe which in my opinion are the best vegan food, thank you so much for the recipe........peace, Mike
That is a good point. Although it is fun to experiment, I agree that the best vegan dishes often aren't ones that are obviously "veganized," but ones that rely on the goodness of whole down to earth foods and pull inspiration from various cultures. You are very welcome

Scones from "the Gluten-Free Vegan". I couldn't find tapioca or sorghum flours so I subbed some others in, including potato, but that totally made them taste like dry potato cakes, and most didn't get eaten.
Sweet n Sour Tofu, using the recipe for Sweet n Sour Tempeh in "Tempting Tempeh". Was quite nice even though I don't usually like sweet and savoury together.
Tater Tacos! Saw a post on the PPK where they'd made tacos filled with Tater Tots, or Potato Gems to me, I was a bit hungover yest'day and the bf thought they sounded like an awesome brunch, they were! I cooked up some onion and tomato, added lettuce and a bit of a tofutti slice
I made more gingerbread and this time I let the dough rest for about 15 mins after being taken out of the fridge, it made them so much nicer and I realised that's why I'd been having issues with them. My bf had a go at icing them, they looked awesome! I did lil men and some hearts and he did lots of cutey designs for me, <3

Hehe, I had one after my dinner of more sweet n sour tofu, if you were in Syd/close to Syd I'd offer to mail you some, Huddy! But they're super easy to whip up and the actual baking time is only 8 mins. Yesteray's breakfast smoothie - mango, kiwi, pineapple, strawberries, flax and oats soaked in almond milk. This was a smoothie breakthrough for me as adding the oats made it so much more filling.
Dinner last night, cooked at a friend's house = cell phone picture. Black Bean & Sweet Potato Burritos w/ Mango Salsa, Cilantro & Avocado.
Breakfast this morning was a parfait with vanilla soy yogurt, blueberries, strawberries, flax and Vanilla Almond Crunch Cereal.
