We made this on the weekend, it was phenomenal! Udon noodles with peanut sauce (there's lots but it's hidden underneath), raw veggies and tofu, yummy! The recipe is from Vegan with a Vengeance, except we couldn't source any seitan so we substituted tofu... highly, highly recommended.
That looks so nice AndyB. I have had so many tofu cravings lately and that looks yummy.

It was 1) Vegan Meatball Sub w/ melted vegan mozzarella on top 2) Vegan Onion rings with veganaise / ketchup / mustard 3) garbanzo + artichoke heart salad dressed with olive oil, salt, and lemon juice 4) "Leche (soya) con Platano" with a twist of vanilla (and creamy protein powder).

My dinner: sesame tofu w/ brown rice and stir-fried green beans and nappa cabbage. It didn't turn out exactly as I hoped but was very good. Even had little gelatinous bits like "real" chinese food does.

I made my beloved a valentine cake.
triple layer chocolate cake, sandwiched with black cherries in sauce and chocolate and vanilla buttercream .... topped with buttercream and a heart of cherries.

i'm wanting to stir fry some brocolli, pepper, garlic, carrot to have with brown basmati rice tonight. i've started to trawl through here for some ideas for flavouring them, anyone posted something or have ideas - must be simple yet incredibly tasty!

Alright, this is very nearly the birthday cake that never was as I didn't start baking until about 6pm, which was after the first lot of workmen had been and trashed my kitchen and before the emergency electrician came to fix the socket wire that the first lot had cut and plastered over thus blowing the sockets in the whole house
Anyways it's the peach melba cake from 'my sweet vegan' and although the icing and jam merged and splooshed out when I put the top layer on (hence the pink seeded icing around the outside) it is VERY nice, lovely and fruity (I added some raspberries into the cake batter too) and makes a change from the chocolate cake I normally end up doing!
