You can eat it raw, it's used as noodles/pasta.
I went to a veggie cafe called Iku, I had the lime bean, leek and corn casserole, served with brown rice plus some bancha tea
A friend had the lasagna with salad
Another friend had a rice ball with steamed veggies
The next day I went for brekky and I had buckwheat pancakes w/ strawbs and banana, yum!
And dinner was gf tortillas w/ smoked Sheese, avocado, capsicum, tomato, onion, mushies, broccoli and green beans
