I just bought Viva Vegan! about 2 weeks ago! I have only tried two recipes from it (one turned out AMAZING..the other I screwed up), but I cannot wait to try more! Kitteh, you are certainly inspriring me to make more from it soon

So, haven't been posting in a while. Preparing to go to Managua to do some interviews w/feminist and transgender women's organizations for my thesis, getting my lectures ready for summer semster, and oh yeah, trying to have some social life
So, I picked up Viva Vegan! as well. I made these great seitan and sweet potato tacos (I added the sauteed peppers which I will leave out next time--good but took away from the delicious seitan and potato). It was fantastic!

Kitteh, I cannot wait to try the tres leche cake; however I am working trying to eat a little healthier (I have been on the most-fattening vegan foods diet for a few weeks, haha), so I am going to wait until I get back from Managua to make this cake, but yours looks a-mazing.

Good idea, it's quite rich! I'm going to be sugar-free during June so I made the cake last week because I just had to try one of the desserts from Viva Vegan! I also want to try the biscuits with the sweet caramelly filling but they'll have to wait!

I made a Shepherd's pie and was going to take a photo but it doesn't look very photogenic. I know it will taste gorgeous though.

It was quite easy to make..............I just copied a recipe from the internet and veganized it!
I used a tub of tofutti cream cheese and a carton of that whipping cream.......I think it's called granovita.........I put them in a blender with some strawberries and a teaspoon of vanilla essence. Then I whisked in some of that vege gel stuff to help it set. I made up a sachet of it and just used half of it.
The base was just Tesco value digestive biccies crumbled up and mixed with some melted dairyfree spread from M&S.
It had to set in the fridge over night and then I added strawberries on top and served it with squirty soyatoo cream!
If this explanation is too vague I will happily pm you if you like.
I gave some to a non vegan friend yesterday and they loved it!

I forgot to mention the recipe says 100g of icing sugar and I also put a little strawberry flavouring in aswell.
(I hope no one has made it yet as it wouldn't be very sweet without the icing sugar )

My meal: Jamaican jerk tempeh over black rice with kale, fruit relish, and coconut plantain sauce
Vegan hot dog under chili, noosh based cheese sauce, avocado, etc. This was at Cyber Dogs in Seattle.
Farfalle pasta with broccoli pesto (vegetarian times) and sauteed mushrooms, baked tofu slices
Buffalo seitan bites (vegan comfort food), collards, creamy dill dip

SmallHelen - I had such a craving for cupcakes yesterday but mine never turn out right, yours look yummo.
Fondducoeur - wow . All the food looks great. I want to visit Seattle because that meal looks gorgeous.
^ Thanks BlackCats. They disappeared pretty quickly at the rehearsal today. Most of them probably didn't even realize they were vegan! One of my friends who knows about my veganism tried one of each type, and said they were lovely.

Brown rice w/annatto-infused oil w/sauteed kale and a whole wheat tortilla.

Kitteh- The tempeh dish tasted amazing. Yum. Also, that risotto with salsa verde looks great, but very interesting. I can't quite imagine how it would taste, but I bet it was good!

DiaShel- yum---spinach would be delicious. I used to eat spinach nearly everyday...I felt like me and spinach were getting a bit dependent on one another, so I am taking a break.
I also made this delicious (not really as healthy) seitan and potato enchiladas....they were amazing!!!! I cannot stress enough that everyone should buy Viva Vegan! The recipes are soooooo good

--Venezuelan-style shredded seitan and potato enchiladas w/green tomatillo sauce and pine nut crema
--Venezuelan-style black beans w/extra chopped peppers
--Cilantro-lime rice
--my version of guasacaca: avocado, tomato, red onion, garlic, lime juice, pepper, scallion and cilantro.
