Not a very good photo but this was todays lunch. White bread pizza topped with home made pizza sauce (Tomato puree, passatta, oregano) grated mature cheddar sheese, sliced tomato, red pepper, pinapple and a few capers on half of them.

Last night, I ended up combining a couple of my favorite dishes (greek quinoa salad and lasagna) and came up with this layered dish:
Greek quinoa with basil-garlic tofu ricotta
Layers from bottom to top
-Roasted zucchini
-Basil-garlic tofu ricotta with tahini and lemon
-Zesty quinoa with spinach, kalamata olives, cilantro, lemon, red onion, parsley, vinegar, garlic
-Tomato slices with toasted pine nuts and basil nut “cheese” (toasted walnuts ground with nutritional yeast and basil)

Experimenting with various flavor combinations = Mountain of Muffins which include double corn muffins with toasted quinoa, sesame tahini lemon ginger muffins, chai tea muffins, peanut butter chocolate chip banana muffins

these are those lemony buttery cut out cookies from vegan with a vengeance. in teh recipe it said bake for 6 to 8minutes after chilling for 2 hours. well i chilled for 12 hours and the ball of dough was mush and ihad to bake for half an hour before turning them over and baking for another 10 minutes. i have no idea what went wrong!?

and then made into a snazzy lemony cookie raspberry and nutmeg shortcake cookie tower and that was reeeeally good!
i made some seitan last night..which is marinading for later..will post a pic of that when it's all done

It was two layers of chocolate cake (made with melted chocolate) and two layers of white chocolate ... sandwiched together and topped with a chocolate fudge icing.

Thanks! Well, I recently started a notebook that I've been jotting down recipes and recipe ideas in. I've been in a creative mood lately and have had time to experiment. Tis fun. But since I've been experimenting a lot of the times I'm kind of inventing/adjusting the dish as a go along so I don't have a lot of exact recipes per say right now.

EmmaP, when I was making gingerbread I misread the part that said, if you chill your dough for over an hour leave the dough out to rest for 10-15 mins. My cookies would be soft and mushy and have a cracked appearance. When I leave the dough out on the bench to rest the gingerbread turns out perfectly
Pancakes from last weekend, using the PPK Buckwheat recipe, they were pretty good but I made some even more awesome pancakes yesterday, I will have to upload a pic of them
Cupcakes for Mum's b'day. The ones on the left are strawberry jam doughnut cupcakes w/ strawberry icing, topped with pink hearts. The ones on the right are gingerbread cupcakes w/ lemony icing, topped w/ yellow flowers. The ones in the middle are choc cupcakes, one w/ strawb and one w/ lemony icing, topped with pink hearts and yellow flowers.
The first loaf of gluten- free bread from our new breadmaker. We ate the crust and binned the dough, when at first you don't succeed and all that jazz :P

Tale of a birthday lunch gone wrong!!
So, it was my partner's birthday the other day and I decided to prepare a feast using as much of our own produce as possible. Plus lots of booze.
After breakkie (some time after, not at 9.30am!) ... we enjoyed a jug of Bloody Mary
Once that had been polished off we fancied a nibble ... so out came various marinaded olives and some freshly roasted wasabi almonds and cashews. What better to wash those down than a Margarita.
They were so nice that we had a couple more glasses.
Rather later than planned we had our starter - a tower of grilled veggies and polenta in a pool of freshly made pepper coulis. I think we opened the Sanccere at this point.
And a freshly made saffron foccacia.
Yummy. Not too long after the starter *hic* came the main course. It was a roasted veggie lasagne from the Candle Cafe Cookbook (as was the starter). It was a lot of preparation, but really tasty.
Ah, but something was missing. In my slighly drunken state I'd forgotten to cook the roast fennel. Ah well.
Time for another ...
Some time later we had our first dessert! (partner is a dessert fiend!). Vision was starting to go by now, and forward planning was a pipe dream.
It tasted wonderful .... caremalised pineapple covered with coconut milk infused with lemongrass, cardamon seeds and lime then baked. Delish ...
.... But I'd forgotten to make the icecream. Oh well. The dessert wine will make up for that.
Then for dessert number two ... a chocolate tower filled with chocolatey coconutyness ....
..... ooops .. forgot the strawberry coulis.
So, the moral of the story ... if you're going to get drunk when doing a dinner, get absolutely blotto and ommissions will hardly be noticed.
PS - this quantity of drinking should of course be once in a while ... it aint big and it aint clever! I had a banging headache that night, but was OK (ish!) the next day
