Refried bean burrito with Tofutti

Seeing this picture this morning made me make burritos for my lunch. Mine didn't come out as tidy as this so I didn't photograph it. It tasted lovely though.

*mild confusion*

all it is is to chop up a fresh coconut..blitz it in the blender till it's gone all little..drizzle in agave syrup..mine ran out so i put in maple syrup which seemed to be the next best thing..wet your hands and shape it into balls/bars or whatever shape you want.it holds together but just barely..pop it on greaseproof paper and drizzle/pour/saturate in chocolate. i had 4 measly squares otherwise they would've had a shedload more chocolate on (obviously )

My lunch - tortillas with veggie mince chilli, sweetcorn, green pepper and some avocado. (I was going to make guac but the avocado was too hard.)

that's a great cake! the frosting colours are especially lovely!

If I'm lucky, I can get tempeh from a big Bioladen (=organic grocery store, not quite health food store), or sometimes from an Asian grocery (but there's a huge risk it's stinky, bad tempeh), or I order it online.

Tempeh is a fermented soy product, but unlike tofu, it has a firm texture and is very easy to work with.
