Went to an nice Italian place on my birthday last week, and the chef made thsi especially for me! Mushrooms w/ lots of garlic, potatoes w/ leeks, and broccoli in white wine.

My birthday cake, based on Ben & Jerry's Half Baked ice cream.
Two vanilla layers (VCTOTW golden agave) studded with VWAV cookie dough, brownie layer (VCTOTW Brooklyn brownie), VCTOTW buttercream frosting and more cookie dough on top. I wanted to get more fancy but ran out of both time and frosting. Inside shot.

Thanks for the comments, guys. RubyDuby, I have actually thought of cooking for a living, in restaurant or catering capacity. I have a lot to learn and a lot of money to save before that happens, but it's always in the back of my mind.

Dinner tonight - I finally made burritos that didn't fall apart!
Fillings were fajita style peppers, mushrooms & onions, brown rice, spinach, cilantro, scallions, salsa, jalapeno salsa & Teese. Served with guacamole & lettuce.

Not into to much frosting here as find it too sickly after a while but will be trying different types of frosting/toppings once i get into using the cupcakes cookbook!
the glaze on the muffins is melted apricot jam (a tip i gained from cherrys website)
Wraps look great i can never tuck the ends in so mine fall to bits!
thank goodness i've just had lunch - or i'd be in serious trouble.

Yesterday I made the 'tuna' mushroom casserole from vegweb
and then some chocolate brownies with chocolate fudge icing using recipes from the bbc website.
The mushroom casserole was okay....needed a little something..garlic and more seasoning I think (it made a lot though!). The Brownies were nice - not really Brownie-like though - more just like a cake, ah well!

I know Bryzee, the perfect Brownie recipe seems very elusive. Have you tried the fudgy wudgy blueberry brownies from V'Con yet? They're supposed to be good. I made the Crumb Topped Brownies from My Sweet Vegan, they were fudgy but very heavy and dense and the edges were very dry....so wasn't too keen on that one. I will persevere....

Bryzee and PoisonIvy, I'll join you on the search for brownies. I know I have many experiments in my future till I find the perfect ones. I just got My Sweet Vegan so we'll see about those, and I've heard good things about Sinfully Vegan although I've found its recipes a bit iffy.

Thanks Jambox Yes, it is onions...but the extra time in the oven after they were fried just about cremated them unfortunately...next time I will remember to allow for the baking and not colour them so much in the frying pan!

Orange scented wild rice salad with toasted pecans and golden raisins
Eggplant and Edamame stir fry, Pizza Bread (sauce + tomatoes + nutritional yeast + vegan parmesan), pixie mandarin orange
Mashed tofu sandwich with tomatoes, zucchini, lettuce and nutritional yeast on cracked wheat bread
Mediterranean hummus and quinoa salad, homemade pita chips, fruit salad (pineapple + mango + orange + pear)
And last night's dinner, veggie pizza (kalamata olives + crimini mushrooms + tomato + red onion + garlic + red bell pepper + vegan mozzarella + vegan parmesan + nutritional yeast)

Of course! After thinking about it, it's probably more of a rice salad than a pilaf. Here, I usually don't follow a recipe but I just typed it up:
Orange Scented Wild Rice Salad with Toasted Pecans and Golden Raisins
Ingredients
2 cups wild rice (either solely wild rice, or a mixture of rices with wild rice)
4-5 cups vegetable broth or water (amount of liquid depends on what kind of rice you use)
1 cup pecans, chopped or whole
1 cup golden raisins
1/3 cup cilantro, finely chopped
½ cup parsley, finely chopped
2-3 oranges zested and juiced
1/2 lemon zested and juiced
1-2 cloves garlic, grated
½ cup white distilled vinegar
salt and pepper to taste
Directions
1.Rinse the rice in a fine strainer. Combine rice and cooking liquid in a large pan, bring to a boil, reduce heat and simmer for about 30-45 minutes. Be careful not to overcook the rice, you want it to be a little chewy because it will soak up the dressing later. After rice is done cooking, use a fine strainer to rinse rice under cold water. Place rinsed and well-strained rice in a large bowl
2.Toast Pecans in a 375 degree oven for 10-12 minutes (reduce time if nuts are chopped), stirring occasionally, until lightly browned. Remove from oven, and cool to room temperature
3.To make dressing, in a small bowl mix together orange zest, orange juice, lemon zest, lemon juice, grated garlic and white distilled vinegar (you can also add a little olive oil if desired)
4.In the large bowl with rice, combine golden raisins, chopped parsley, chopped cilantro, and dressing mixture. Add salt and pepper to taste. For best flavor, refrigerate for about 2 hours before serving.
5.Mix in toasted pecans immediately before serving so they remain nice and crunchy. Enjoy your healthy and delicious meal!

That is actually one of my brother's favorite dishes (and he's definitely far from vegan!) which he requests almost every time I ask him what he wants for dinner. You could easily throw in some cranberries along with the golden raisins as well, which is something I have been meaning to try. Oh well, I might just have to make it again soon, haha
