Tomato-sage quinoa and great northern beans with garlic herb roasted potatoes, red onion, and fresh chives
Tofu, vegetable, and fruit curry (bell peppers + edamame + red onion + cilantro + mandarin orange + mango + pineapple) with jasmine rice
Tropical banana muffins (strawberries + pineapple + mandarin orange)
O-M-G sinarei, that food looks so amazing... I think I'd seriously love food and eat way too much if I could cook like that!!

I used the basic recipe for the orange-toasted pecan-golden raisin rice salad as before but switched it up by adding dried cranberries and fennel on top of a bed of pea shoots. This was my first time trying pea shoots and they were really good! Crunchy and fresh

Fresh salad .. so fresh that everything was growing in my potager 10 minutes before I ate it

MMM I have been enjoying a lot of Asparagus this last few weeks. Shame it costs quite a lot though just for a couple of small bunches from the stupid supermarkets... £4.00 for a few whole ones or £2.50 for 2 packs of some asparagus heads in a small package. hehehe

no, i didn't make the burgers, i cheated and bought them (engine shed brand) they were delciious. My son didn't like his so his dad ate two of them! .

It was not vegan but made up of different types of cakes - dairy free, wheat free and the lady made the 2 vegans cakes and wrapped them to avoid cross contamination and so she could write the ingredients on
She can do whole vegan wedding cakes and other cakes
I also had vegan burgers and sos in the eve but didnt take a pic of those, oh and they got some yummy bread in from the Authentic bread company in Gloucester! I was so pleased and impressed by the level of vegan knowledge and catering at this venue
that's excellent, and what a great idea for the wedding cake, having a mix of large and little cakes - no wastage.
ooooh this looks great... actually I might do this for the wedding cake I have to make end of the month... we had planned on only doing cupcakes so everybody can pick them to their dietary needs (we have omnis, vegans and some people with severe allergies), but a big one wouldn't hurt.

Mmm a veggie burger would be soooo good right now, I've just done yoga so am having a biiiig green smoothie instead.
Some stuff from my weekend:
Tempeh burger on lettuce w/ peanut sauce, broccoli & mushies
I made g-free choc and vanil cupcakes and avocado-tempeh sushi for a vegan picnic we organised at Manly Dam
And later I made gingerbread shaped like tenpins and cupcakes for a friend's 25th bowling party
The gingerbread got a bit jumbled during the car trip so the red icing got on some of the white and one cupcake is missing because as I set it all up a friend came and stole one

Each snowflake in an avalanche pleads not guilty.
Its absolutely yummy, needed a bit longer than the cooking time given in the book (about an extra 20 minutes at a lower heat) to get the middle to cook.
The lack of measurements is a bit weird but it can literally be thrown together in less than 5 minutes which is gooood!!
I haven't made anything else from it....yet!

Tonight I made Choc-Orange Muffins from this recipe: http://www.veganfamily.co.uk/doublechoc.htm they were delicious but my bf thought they were a bit thick so perhaps I needed to add more rice milk at the end. I also made them w/ rice flour so they are g-free
And last night I made the banana bread from the PPK recipe section, also using rice flour. Made it in a round cake tin as I realised I have no loaf tin!
And some more sushi I made on the weekend, marinated tofu, avo, carrot
that sushi is calling my name!
I so need to try my hand at homemade sushi, you guys are putting me to shame!

Stirfried eggplant, carrot, celery and kale over white rice topped w/ basil, sweet & sour peanut sauce and toasted peanuts.
The sauce was really simple and tasty, recipe on my blog.
