I used a store bought blackening/cajun seasoning this time, normally I use a homemade blend. It's packed away right now
Est, I have no idea what hunan sauce is, I got it at a Chinese place. It tasted like a garlicky chili sauce.

My mushroom, spinach, onion "cheese" quesadilla with two salsas. The bean/corn one is homemade the red one is store bought:
The "cheese" is the nutritional yeast/ soy milk/ Earth Balance margarine recipe used for my nachos and often mentioned in mac 'n' cheese vegan cook books.
i've never thought about using nutritional yeast as the cheese is a quesadilla, thats actually a really good idea, the soy cheese never melts as well as i hope, even if it says it melts on the package...i really should try that for enchilladas...

I made this roast lunch despite it not being Sunday and it was so nice. Roast potatoes, roast parsnips, broccoli, greens, stuffing and fake chicken fillet with veggie gravy.
I also had neapolitan Swedish Glace ice cream (finally) with fresh pineapple and banana for dessert but the picture came out really dark so I won't post it.

I just made mini raw pizzas and they turned out really yummy! (They are from the "You Won't Believe It's Vegan" cookbook which I really like because it has a whole raw chapter and also everything else).

I followed the one on the box and modified it..
It was 1/4 cup of tapioca
3 cups of coconut or soy milk
2-3 tsps of vanilla extract
1 tablespoon of sugar
banana or shreded coconut to top
Cook the tapioca and milk stiring constently for 12-15 minutes until the tapioca completely is translucent. Remove from heat and add the sugar, Vanilla and any other flavourings you want. Stir well, Add toppings and chill.

Many kitchen supply stores have them. Bed Bath and Beyond, Linen 'n' Things, and Kitchens etc.
Jamboxrock, excellent for a first timer. I've found some of the secrets to making it is to use a razor sharp knife. I actually sharpen my knife with one of those pull the blade through this "V" shaped device gizmos just prior to use. Also wipe the blade clean after each slice and then wet with water prior to each cut. This helps minimize "rice stick". Cut the full length roll in half and then place the two pieces side by side, hold together and slice the two together into thirds or quarters. I watched the pro's do it to learn this and they all seem to be rather consistent in this method.My first attempt at homemade sushi.

oops, I must've missed that when I first read it. Same cheez sauce as I use for nachos. Also, don't re-cook the sauce inside the quesadilla. Make the quesadilla, including the internal veggies, cooking on both sides and then peel it open, add the cheez sauce as the last step, reseal, cut, and serve.
