My first attempt at vegan chocolate cupcakes a couple of months ago.....I only got around to posting them now.



This is how I ate them...with a delicious mug of tea...or coffee...I can't remember. Delicious anyway!

I made the 'eggy' bread by making a sort of batter with egg replacer and soymilk with some salt and pepper, works with flour too. Fried them in plenty of marg in a non-stick pan. I have a feeling they would stick like crazy to a normal pan.

An evening meal at Peking Palace in London. This is the main meals from Set Meal B and C for 4 people. (The starters were generous and very tasty indeed and there was a crispy duck course in between.)

ricemallow=vegan fluff... the marshmallow topping on the sweet potatoes...
ezekiel is the complete protein grain. the rolls were kind of hard, but everything else was really good!

I use Cherrys lemon/lime cake recipe off parsley soup so nice (thanks Cherry)

My aunt had made an apple cake but not vegan and an apple cobbler which had bertolli marg in the pastry she thought it was ok but im sure bertolli is not vegan so did not try any.

Last week we made pizzaq, my bf found some gf, vegan pizza bases which were really good! I topped mine with tomato puree, chopped toms, zuch, onion and 2 Tofutti American style cheese slices.



And this is a vegetable stack w/ a soft pastry/bread type thing from my friend's wedding



And my new baby pink KitchenAid mixer with it's first batch of cupcakes - gf choc w/ choc and banana icing! It's an early Chrissy presents from my awesome bf!

That's one of my favourites too. It looks really good with butter icing on top, Alison. (Though I normally need the zingy quality of the lemon glace icing to stop me feeling sick when I'm onto my 3rd piece )

Do you mean decorating? Those ones I have just spatula'd the icing on messily but you can use a piping bag to make swirls etc. And you can fill a bag up and then pretend to ice things if you want to practice, like a plate or on some cling wrap on the bench.

Wilton's website has lots of tips on decorating too!
