Strudel.. my favourite dessert ever ! It disappears in a few hours...
It doesn't take long, it's healthy, yummy, everyone seems to like it.
So I use it often to show how great vegan food can be.
Mediterranean olive quick bread
This one came out even better the second time around when I added
dried tomatoes, as the recipe asked. (i was out of them the first time I tried it).

It comes from "the joys of vegan baking".
I slightly changed the recipe though.
I didn't use phylo pastry. I used just one sheet of another type of pastry.
I'm not sure how you'd call it. It's the same one I use to make quiche.
Anyway, then I just followed the instructions of the book very carefully
and yes, it's the yummiest strudel i've ever made.
She says to spread non-dairy butter on the pasty.
I used soy butter and it tastes delicious..
I love that book.
I've been trying a lot of the recipes and they all came out super so far.

My bf's sister has that book, I was going to borrow it and try and make gluten free versions of the recipes in it, but never got around to it.

Joy of Vegan Baking is a lovely book, haven't got around to making anything from it yet - I suffer from too-many-cookbooks-syndrome, the one thing that annoys me though is the copious use of egg replacer, I hate that stuff!

Baldrick: Yes, it's like goldy and bronzy only it's made out of iron.
For each egg to be replaced, blend 1 tbsp ground flax seed w/ 3 tbsp water.
For baking, you can use banana or applesauce, too.

All I have made from The Joy of Vegan Baking so far were the peanut butter cookies and the banana choc. chip muffins. The peanut butter cookies were a bit moist (they didn't seem quite like the non vegan ones my mom makes), but they were good. The muffins were delicious.

@kitteh: how do you get along with Ani Phyo's books? I wanted to buy one but reviews were quite bad.
Kitteh, those save the salmon patties look so good! I'm very interested in that raw book. I'dve loaded them up with seaweed though

Pavo, I have Ani Phyo's book, as well. I really like it, but I'm not very motivated to "cook" in general, so I'm probably not the best person to ask about the book. But I'm looking for a good dehydrator and food processor. Then I'm hoping I'll have the motivation to use the book a bit more.

LMNOP - mine didn't taste fishy because I left out the dulse flakes, so they just tasted like onions and veggies! I guess you could add different herbs if you want a different flavour

I've read the comments about too many photos as well but I've also read blogs and posts about how good her recipes are and all the photos of the food ppl make from it looks so good so I disregarded those comments. Usually ppl complain there are not enough photos in cookbooks! Some ppl also say her recipes are too oily or salty but my only issue so far has been the raw garlic being too strong for me. I think I will purchase her book

I love oil, salt and raw garlic !
I'm trying to cut back on using a lot of oil and the recipes I have tried of hers don't contain liquid oil but lots of seeds and/or nuts, so maybe that's what ppl have an issue with. I also enjoy salt and like to add a small pinch to some of my raw meals

I would, but I'm totally okay with experimental cheese substitutes. If you're okay with that kind of thing (like blocks of cheese made from cashews, roasted red pepper and agar) then you'll probably like it. Oh, and lots of nutritional yeast of course. That casserole was really good, and I like one of the grilled cheese recipes a lot.
