I've made this twice this week and it was really good. It's adapted from a Leah Leneman recipe. Chopping the dates and nuts is a a bit laborious, but if you buy them pre-chopped it's a quick and easy recipe.
250g/1.5 cups chopped dates
85g/ 1/3 cup vegan margarine
115g/3/4 cup raisins or sultanas
10 glace cherries, halved
250 ml/1 cup water
60g/1/3 cup chopped pecans/walnuts or a mixture
1 tbs sweet allspice (nutmeg, cinnamon, ginger etc)
225g/2 cups wholewheat flour
2 tsp baking powder
Preheat the oven to 375F/190C
Heat the fruit, margarine and water in a saucepan. Bring to the boil and let it simmer for a couple of minutes.
Meanwhile, mix the dry ingredients (flour, nuts, spices, baking powder) in a bowl.
Turn off the heat, mix the dry ingredients into the pan, and put the mixture into a loaf tin. Bake for about 45 minutes at 190C.
It can be a no-added-sugar recipe, but I shoved some caster sugar in the first time I made it, the second time I added a bit of date syrup.
