Unknown amount of servings

1 c. cashews
4 c. water
1/2 c. tapioca pearls
1/3 c. maple syrup or barley malt syrup
1 tsp. vanilla
1/2 c. unsweetened coconut, shredded
1/2 c. dates, chopped (optional)

Blend the cashews with 1 c. water until smooth. Pour into saucepan with the remaining water. Add the tapioca and soak for 15 min. Add the maple syrup. Bring to a boil. Reduce heat and simmer for 10 min. Remove from heat. Add vanilla, coconuts, and dates. Cool before serving.

I haven't tried it yet, don't know if it's good.
