    I made the low fat Banana Bread just now, it tastes lovely, the spices and molasses make it just a little bit different from all the other Banana Breads out there, and it is light and moist - you would never know it had very little fat in it (just a 1/4 of a cup of oil in a 2lb loaf)

    The day before yesterday I went out and bought the ingredients for the "shepherdess pie" then the next day my mum was already cooking it when I got up .... Then yesterday night I wrote down the ingredients I needed to make the lasagna mariana with spinach, but by the time I got up she had gone out, got the ingredients and it was already in the oven lol, even though she was complaining that we would never find 1/2 the ingredients when I 1st bought teh book.

    Lesson to be learnt: Convert people to veganism through cooking good vegan food, then supply more recipes and they won't be able to resist.
    Lesson 2: Get up earlier

    Oh and they were both great by the way, especially the lasagna

    I never really cared for the snobby joes. I didn't dislike them, but probably won't make them again. However, the smlove pie was very good.

    A friend of mine tells me that the moussakka (sp?) is the most ridiculously delicious thing she's ever tasted. I'm going to make it tomorrow night.

    Poison Ivy, your smlove pie looks better than mine. More creamier plus the caramel looks...well, more like caramel.

    Did you follow the recipe exactly?

    I must confess that I substituted agave nectar for the brown rice syrup and vacuum-packed tofu for the "regular" kind. Perhaps that's why mine didn't seem as good as yours. It was still very good though.

    I didn't follow it exactly Sponge as some ingredients are a bit trickier to get hold of where I live.

    I had to use cornflour instead of arrowroot, rice syrup instead of brown rice syrup and I used mori-nu firm silken tofu in the tetra-pak, as I wasn't sure whether it was supposed to be soft or firm silken the recipe uses so I plumped for the firm

    I found brown rice syrup yesterday at a regular supermarket. (Safeway - not sure if they have that store where you're at.) I was shocked because I thought I would have to go to the health food store to purchase it.

    Goodness Direct....apparently Arrowroot is too exotic for my local shops to carry so there's no way I'd ever get rice syrup locally

    lol, I think enslaving fairies for the purposes of vegan cooking is a bit of a contradiction , I am lucky though cause I know some peoples families are opposed to their veganism never mind cooking for them

    vital wheat gluten is the pure gluten powder... if it's for seitan, you can make it out of flour, but that's a pain in the ass. I haven't seen it in stores in Europe either.

    But you could ask at some bakeries- they usually have tons of the stuff- or order online.

    Thanks Pavotrouge - I wanted to make the chickpea cutlets that everyone was raving about. Do you reckon it would work without the wheat gluten? Or maybe with flour/strong bread flour instead?

    I think some people over at the PPK forums substituted glutinuous rice flour, maybe that would work for you.

    But there's no 100% substitute for gluten powder IMHO.

    ended up making the burgers tonight instead cuz we were too tired. the bf made them and he seems to think bigger is better (men ) so they turned out like mashed potatoes with a crunchy shell. kind of bland too. satisfying though. adding a bit of extra salt and some liquid smoke helped. oh well. next time.
