    Default Raw Fettuccine Alfredo

    3 Zucchinis
    1 Cup Pine Nuts
    1 Cup Cashews
    1 Cup Macadamia Nuts
    2 Cloves Garlic
    2 Tbl Sp. Fresh Squeezed Lemon Juice (about a half of a lemon)
    1/2 Cup White Wine Vinegar (I use Pinot Grigio)
    1/2 Cup Water
    1/4 Cup EVO Oil
    Fresh Basil
    1 1/2 Cup Sugar Plum Grape Tomatoes (or regular grape tomatoes)

    This is super easy and full of flavor!!
    Take the zucchini and peel the green skin off, discard the skins. Once the skin is peeled continue peeling the zucchini into a large salad bowl. The strips become your noodles. Once finished set aside.

    Take your Pine Nuts, Cashews, Macadamia Nuts, Garlic, Lemon Juice, White Wine Vinegar, Water, and EVO Oil place into a food processor. Process until mostly smooth. This is your Alfredo Sauce. Add it to your "noodles" mix well, try not to break your zucchini, but if you do it'll be fine .

    Chop or tear the basil and add it to the bowl along with the tomatoes.

    *Make sure your vinegar is a white wine not just white vinegar!!!

    if you have a saladaccio or spirouli, you can make the zucchini into spaghetti strips which work well with raw sauces too.

    i was going to go out and buy one of those fancy things to make raw "noodles" but i think ill give this a try first! so genious !

    previously i would just grate things into shreds for "noodle" recipes!
