    Default Today's The Day For Chili...

    True story. Rainy day out and all of that calls for a good bowl of chili. I tend to cook for tons and tons of people when I make something like that, so I usually use large cans of kidney beans, black beans and crushed tomatoes. I then add chopped green peppers, some stray carrots, some purple or white onion and then let it simmer for 6 to 8 hours. Every now and I again, I'll progressively add amounts of cumin, chili powder, and various types of paprika (hungarian is a personal favourite).

    I've also got some whole wheat dough rising right now so that I can make some foccacia bread with pesto sauce. add some chopped veggies over the top and bake and instant dipping material for the chili. I can't describe how stoked I am for dinner tonight!

    MMMMM Chilli with looooads of Kidney beans (at least for me). Do you think baby sweetcorn would go well with that at all?? hehehe

    That food I am sure, tastes awesome, it looks a little.....weird, I guess! LOL

    I had chilli tonight too! Although we decided to cook a chilli-risotto, which I thought would be too odd, but was actually really filling.

    Oh I'm silly, I just posted a chili recipe and overlooked this one. I like that we make ours differently though and it's interesting to see how you like to make yours. Looks delicious!

    veggie mince
    onion & courgette from the garden
    pepper
    mushroom
    garlic
    kidney beans
    sweetcorn
    canned tomatoes
    passata
    bit of sugar
    some balsamic vinigar
    dried chilli flakes


    ...with taco shells & brown rice

    I made VWAV's chili mole with seitan last night. I as a little unsure about it last night, but today it tastes excellent. Its a little different with the cocoa powder, and if i make it again i might add some more vegetables, but its delicious. I made some fresh beer bread that went with it nicely.

    if i have it, i often add some grated dark choc into my chilli - it adds a real depth and richness to it - tastes smoooooooth.

    I made chilli last night and since it all got eaten I've just made another lot!
    My recipe calls for a glass of red wine.............plus it tells me to pour one for myself while I'm cooking.........so of course I always do what I'm told!

    I just had chilli again today. This forum is such an influence. I used veggie mince, kidney beans, red and green pepper, mushrooms, tomatoes and three whole green chilli peppers and I had it with rice and flour tortillas. I would normally have had grated soya cheese and salsa with it also.

    Lord, I cannot cook for real so I've always loved packaged easy vegan meals but lately I've been wanting SOOO bad to cook something. I think chili might be the first thing!

It is a dry gritty material one can often buy in a health food store bulk department which you reconstitute by boiling in water. It would then have a consistency similar to ground beef such as in chili.

    Is passata what we call in the US tomato paste?

    Mahk, I think veggie mince is what call "ground round" over here. The fake "ground beef" stuff that's moist, refrigerated, and often already seasoned.

    No, passata is like pulped tinned tomatoes. Just use tinned tomatoes or chopped tinned tomatoes and you'll be fine.

    We describe them passata as sieved tomatoes here in the UK, I love them as you don't need to add any tomato puree (tomato paste in US). They make a fab base for pasta sauce.

    I was in the super market today and saw stewed, boiled, crushed, pureed, sliced, sauce, paste, concentrate, pasta sauce, pizza sauce, Italian sauce, low sodium, w/ added green peppers, w/ Italian herbs and spices, organic, plum, sun dried, sun dried paste, cherry, and w/ garlic tomato products all next to each other, but none of them were in "tins", they all were in cans, so I walked home empty handed and confused.

    oh chilli! what a great idea. pretty much the main (only) affordable form of protein i can get here is beans and i was starting to feel a bit at a loss for new things to do with them. i normally put lentils in my chilli as well as beans and thus in absence of lentils in the shops (so far as i can see...they must be somewhere. i know the WORD in croatian, dammit!) i hadn't thought to make it. bonza!

    Big ol' pot of chili simmering away on the hob here today. It has:


    • Veggie mince
    • Kidney beans (dried, soaked over night)
    • Black beans (dried, soaked over night)
    • Onion
    • Celery
    • Green sweet pepper
    • Tomato
    • Chestnut mushrooms
    • Courgette
    • A foolish quantity of birds eye chili peppers

    My eyes are streaming from stirring it so it should be a good 'un.
