    Default Picture Post - Ginger Tofu

    So tonight I made gingerbread tofu mixed with veggies over baked rice...the texture wasn't as crisp as I would have liked it to have been, but once I got used to it, I enjoyed it a good bit...

    hah! same here! day off (though I had to fight for it). I split my time inbetween being a cook and working in an art department. I'm trying to appeal to the higher ups in the kitchen I work in that if people are given vegan alternatives, even if they aren't vegans themselves - they'll eat the alternatives because they're healthy ones. It's an uphill battle but I'm holding to it that it'll happen at some point.

    very hastily. hahah. Usually I boil soy sauce, ginger (you can use fresh or dried, it doesn't really matter), chili powder and brown sugar together and thicken it with cornstarch. I was in a bit of a rush tonight so I didn't bother to put the cornstarch in - but it still turned out really well. I also tried a new trick and added some maple syrup which worked REALLY well to my suprise

    I'm not going to give you exact amounts of anything and here's why - I've known people to HATE what they've cooked because they weren't able to follow each quantity in the recipe to the letter. My philosophy is that as long as you know what the basic ingredients are, you can add and subtract things to yr taste and liking.

    Ok here's what you do - the rice part is obviously the easiest. Take a few cups of white rice (gauge this on the amount of people yr serving) and two tablespoons of sesame oil. Fill it an inch or so above the rice w/ water. Let back in the oven for 45 minutes to an hour covered.

    Now for the tofu, make sure you've got all of the water pressed out of it - dice it up and then shake it up in a ziplock bag with cornstarch.

    Take two cups of soy sauce and mix in a cup of brown sugar, a third a cup of dried ginger (or a couple tablespoons of real fresh ginger) and a tablespoon of garlic (or half a fresh clove minced).

    Once you've done this, let the tofu soak in it for half an hour or so - this will allow the tofu to soak up the juices.

    Now cut up any kind of vegetables you like (I used green peppers, purple onions, carrots and mushrooms) and set them aside.

    Warm up yr wok or frying pan and put in two tablespoons of sesame oil (trust me, you don't need more then this once the sauce is applied). Take the tofu out of the sauce and fry it until it's nice and crisp (or atleast good and firm - but not spongy) and then add the veggies. As yr stirfrying all of this, add the sauce in increments until it's all in. From there on, stirfry it until yr content with it (some people like the veggies crisp and some like them soft - and maybe a person here or there likes them soggy, but not me!)

    put yr rice on the plate and then add the stirfry over the top and voila!

    it's a bit odd but it works. If there's still water in the bottom when you stir it around, then you know it still needs to cook a bit more.
