Not a roast exactly but delicious and very festive. It was on a Viva recipe sheet a few years ago.
Chestnut and red wine pate en croute
2 tablespoons olive oil
2 onions 2 garlic cloves crushed
2 oz mushrooms
1 glass red wine
1 lb mashed chestnuts
3 oz fresh breadcrumbs
salt and pepper
1lb frozen puff pastry --defrosted
soya milk to glaze
Preheat oven to 230 C/450 F
heat oil and fry onions
add garlic and mushrooms
pour in wine and bubble away for a minute or two until almost gone
stir in breadcrumbs and chestnuts leave to cool
Cut the rolled out pastry into 2 strips.
pile the chestnut mixture onto one, leave at least half an inch round the outside and top with the second, sealing round the edges with water, and cut vents across the middle.
Bake in the pre heated oven for 7-8 minutes then reduce the temp to 200 C/400F and bake for a further20-25 minutes until pastry is golden.
I do what I can and that's better than doing nothing
hey, here's Cherry's recipe which is great (hope she won't mind me posting it here!):

This isn't bad ... More of an everyday dish than special meal though ...
ChestnutRoast(serve 3-4)200c/400f
100g red lentils, cooked
100g cashew nuts, whizzed in blender
200g chestnuts (fresh or not)
½ tin of chopped tomatoes
very small handful of rolled oats
dash of boiling water, just enough to mix up to a very firm 'stodge'
stock cube
and these are DELISH!!! ..
Mix nuts, chestnuts and tomatoes in a bowl, then season and add the oats and water to mix.
Press mixture into a greased loaf tin and cook for about 40 minutes until solid and browned.
MiniChestnutRolls(RoseElliot)190/375/5
250g unsweetened chestnut puree
1 small onion, grated
1 clove garlic, crushed
1 tablespoon lemon juice
1 tablespoon soy sauce
100g wholewheat breadcrumbs
pinch chilli powder
225g puff pastry
Mix everything together and stand for a few minutes. Add more breadcrumbs if necessary.
Roll out pastry quite thinly and cut into long strips 5vm wide. Roll pieces of mixture to width of little finger and lay onto pastry. Dampen edges with water and roll. Prick with a fork and cut into 2.5cm lengths. Bake for around 10 minutes
I can vouch for Zan's recipe above ... really tasty and dead easy to cook.
