    Default Favorite Kale recipe?

    I've just recieved a huge bunch of kale, and now im wondering what to do with it.. Do any of you have an easy good kale recipe, because I need some inspiration

    No, don't put it in the bin, Stine! Try to sauté it with some garlic and spices you like and serve with brown rice. :P

    foxytina had a recipe she raved on about for kale that influenced loads of us here to try it..it was prety tasty..though got stuck in teeth baaad

    think it was somehting like to chop it up and toss it up in a bowl wiht something like vinegar and oil then bake it till it goes crispy and crunchy. i never got the amounts right and wasn't sure on the oven temp, so mine wasn't so great..well not as great as tina's sounded?! but in theory i could see where it might've ended up being brill. i bet that recipe is somewhere on vegweb stine?

    I would steam it with some or all of leeks, onions, red peppers, until it was tender.

    Then serve with a roast dinner, or bangers 'n' mash, with lashings of thick, slightly peppery or spicy, onion gravy. And maybe some mint sauce sprinkled on it, but that's probably just me

    I do spring greens the same way.

    I like it stir fried with cashews and spring onions then served with brown rice.

    My very favourite kale recipe is "Tina's healthy kale meal" that ConsciousCuisine posted for foxytina ages ago. I LOVE it! I bookmarked it, so I'll paste the recipe below:

    1 bunch kale, washed and sliced into thin ribbons
    1 cup brown rice, cooked
    1 cup lentils, cooked
    2 T soy sauce
    6 cloves garlic, chopped
    1 onion, sliced thin
    Splash of vinegar, lemon juice, margarine or oil, nutritional yeast and pepper as desired


    Steam the kale either in a steamer basket or in a small amount of water. Cook the garlic and onion in a frying pan in a small amount of oil, margarine or water. Add kale and stir until mixed.

    When complete, mix in lentils and rice, soy sauce and vinegar, lemon juice, oil or margarine as desired, nutritional yeast and pepper.

    Eat it, it's good!

    There are a MILLION variations on this with spices and veggie of all sorts and it's so delicious each way!

    The other really yummy thing to do with kale and lentils is cook the above recipe but leave out the brown rice and serve the mixture with mashed, seasoned potatoes (SOOOOOOOOO good!). You can add any veggies you like to either of these.

    That's very naughty of you Mr Flibble - kale is lovely (not like disgusting dates - ptooey)

    The Guardian on Saturday had loads of kale recipes this week but I can't find the link because I am hopeless but i have found loads of lovely kale recipes here:

    my standard salad

    one bunch kale
    one bunch chard (anykind)
    2 carrots shredded (or chopped up in the food processer) (beets work fab too!)
    (the rest of these measurments are all guesses... i just toss things together!)
    1/4 cup oilve oil
    a little less than 1/2 cup apple cider vinager
    a couple of table spoons of nama shoyu or braggs liquid aminos
    three or four table spoons of raw agave nectar
    a pinch of sea salt
    1/2 cup of some kind of nuts or seeds i have used pumpkin seeds, sunflower seeds, slivered almonds, pinenuts

    optional: one or two cloves of garlic gives diced it a bit of a kick!

    i wash the greens and then tear them with my hands into a big bowl. add the ingredients and mix and tear the mess with my hands. its easier and everything mixes well that way, really!

    this is my fav food on the earth!

    don't you find massaging and squeezing the kale softens it up nicely jj?

    If you did that to our delicious veggie box kale there'd be trouble !!! I gave up trying to disguise it and sneak it into Mr Flibble's food so now I cook it separately and eat it all myself!

    My favourite is to fry sliced onion, add chopped washed kale, shove the lid on and steam/fry/simmer? for 15-20 minutes. Lovely.

    I had a yummy spring greens dish tonight which would work the same with kale.

    1 onion, gently fried for a couple of minutes in a large saucepan.
    Add 1-2 potatoes, thinly sliced, a few shakes soya sauce and a couple of tablespoons of water, leave to cook for a couple of minutes while you slice
    1 large carrot, thinly. See how the water is doing, add more if it is sticking when you move stuff around.
    1 largish spring green bunch. Wash, slice thinly and add.
    couple of cloves of garlic, chopped.
    juice of 1/2 lemon.
    Put lid on, keep heat low, check it doesn't dry out and burn, eat when potatoes and cabbage are soft.

    I ended up using this recipe from vegweb... It was very good

    Kale Cream Pasta Sauce

    Ingredients (use vegan versions):

    1 1/2 cup soy milk (preferably plain, but vanilla will do)
    4-6 tablespoon nutritional yeast
    1/2-1 tablespoon margarine (optional)
    1/2 teaspoon each: dill, thyme,
    1 1/2 teaspoon garlic powder
    1/2 teaspoon salt
    1/2 teaspoon pepper (opt)
    3 teaspoon flour (amount various)
    4 medium/large leaves of kale

    Directions:

    Add everything except the kale and flour to a saucepan and stir. Steam kale (or if you're making pasta, cook it in the boiling water before you add the pasta) for about 1-3 minutes, depending on how crunchy you like it. Remove and cut up in small pieces. Add to the sauce. Heat the sauce, and when it is fairly warm, start adding flour slowly, so that it doesn't clump. Whisk or stir constantly! When you have enough flour added, remove from heat, or serve immediately. I've found that this tends to burn quickly if left on a warm burner.

    This is a recipe from Simply Vegan (Barbaras Kale Sauce).

    Greens and potato curry, aka "aloo sag" (google the latter for recipes there are lots) it is delicious with finely chopped kale. Where the recipe calls for spinach, cabbage or greens just use the kale.
