    Default Mince Tarts

    As it's not that easy to get pastry and mincemeat that is free from palm fat and/or trans fat I decided to make my own mincemeat and pastry.

    I followed the recipe here for sugar and fat free mincemeat:

    And made wholemeal sweet pastry tarts to put it in. Recipe for the pastry was: 8oz Wholemeal plain four, 2 oz refined coconut fat, 2 oz rapeseed oil, 2oz sugar, and a little water.
    Came out rather well, although that quantity of mincemeat will go a long way! I stuffed twelve little tarts to bursting point, and still had masses left over.

    I think the mincemeat could be improved by a squirt of lemon juice, as I felt it was lacking a bit of acidity, but it is still really tasty.

    If these are remotely as good as your lemon tarts you're on to a winner. You need some sort of pastry award.

    The penultimate paragraph made me giggle.

    Thanks. They were pretty damn fine.

    Adding the juice of half a lemon makes the mincemeat just about perfect

    I changed the pastry recipe to: 6oz wholemeal flour, 1oz deodorised coconut fat, 1.5 oz rapeseed oil, 1.5 oz sugar, sufficient water to make dough that can be rolled out. That was enough for 24 tarts - it was easier to roll out than the previous effort so I managed to roll it thinner.

    Best served warm with brandy custard

    mmmmm

    I went commercial this year. Found that the 'Walkers' brand were vegan. Otherwise, I would have bought commercial pastry and a jar of fruit mince.

    Wish I could have had one of yours however.

    This year's tarts were quick, easy and cheap.

    Mincemeat:
    Cheap packet of dried fruit (type with raisins/sultanas and candied peel)
    Cheap packet of chopped nuts
    Juice of 1 lemon
    Mixed sweet spice
    Mashed banana
    Good glug of brandy.
    Mix together well, chill overnight and adjust sugar/spice if needed.

    For the pastry I used half SR, half plain flour, plus a little sugar. Stirred in canola oil, then brought together into a slightly crumbly dough with water.

    I don't really have quantities, as I just winged it. I got the fruit and nuts from ASDA, so it's whatever size the bags were. Probably a couple of tablespoons of sugar, 1/2 to 1 teaspoon of mixed spice. I was generous with the brandy too, as it's needed to rehydrate the fruit. You could probably use fruit juice or cider instead. The banana binds it all together.

    It's pretty forgiving, and you can adjust sweetness and spices after it's been left to mix over night.

    I looked up the size of the mixed fruit, it was 500g and 100g of chopped nuts.

    It made 48 tarts. Which lasted about 10 minutes.

    I forsee a trip to the shops as I'm out of dried fruit... but this sounds yummy.
