Sorry the Jenster never measures. This is as easy as falling over and tastes pretty good.
Theory
- Vegetable stock (home made or from cubes,)
- Mashed potato (optional I just use it to add substance)
- Tinned or fresh tomatos
- Tomato puree
- Fresh coriander
- Olive oil
Method
Add chopped coriander to taste
- Heat stock in a pan
- blend tomatoes in a blender or using a hand blender
- Add blended tomatos to pan
- Add tomato puree
- Add mashed potato until desired consistency acheived
- Season to taste, add a spash of olive oil to give it a shimmery look
