    Default pistachio & cranberry cookies

    Pistachio Cranberry Cookies

    ~ Yield approximately 20 cookies

    These are really delicious. It’s almost impossible to eat just one. And, they’re so easy to make that you have to try them right away.

    ~ 1 1/4 cups macadamia nuts
    ~ 3/4 cup pistachio nuts
    ~ 1/3 cup unsweetened, dried coconut
    ~ pinch Himalayan crystal salt
    ~ 2 cups dried cranberries
    ~ 3/4 cup raisins

    Process the macadamia nuts, pistachio nuts, coconut and salt in a food processor, fitted with the “S” blade, until coarsely ground. Add the dried cranberries and raisins and continue processing until the mixture begins to stick together when pressed between your fingers. Roll the mixture into balls and then gently flatten them so they are like cookies. These freeze great!

    Have you made them? They sound delicious except for the macademia nuts which I dislike - any recommendations for a substitute? I think I'll be making theses soon.

    not yet but i plan to - i'm out of pistachios & macadamias. i think i may halvethe amounts for a try, i'm thinking a large amount of macadamias like that may prove expensive.

    i guess you could replace the macadamia with another nut with similar 'soft' texture, maybe cashews or brazils ? play with it!

    I'm off to the health food shop tomorrow - will try cashew nuts and report back! I am going to halve the amounts as well...

    I had a go, but the pistachios were too dear (a fiver for the smallest bag) so I got brazil nuts instead, and cashews instead of the macademia - and forgot the coconut! And I didn't have any Himalayan salt. So it wasn't really the same recipe - but have to say the cranberries gave it a lovely tart flavour and will try it with pistachios another time.

    Sounds like a yummy recipe Cedar! I really need to get a food processor.....this is the 2nd recipe in the past couple of months where I've needed one, but don't have one.

    sorry anne, your post made me laugh in a nice way! sounds like you just made up an original raw recipe there!
