I'm so happy people are posting on this thread again. I love seeing all the bentos.. if only my laptop lunch wasn't thousands of miles away!
Ashley - I peeled and boiled 3 sweet potatoes until easily pierced with a knife, drained, and set them aside. In the same pot I brought a bit of soymilk (about 1/4 inch I'd say) just to a simmer, then took off the heat and whisked in a heaping Tablespoon of miso. Poured it over the potatoes and mashed, adding a dash of five spice powder, some salt, and a large amount of mustard powder. They were good, but not outstanding. I think it'd be better if you sauteed some shallot or green onion in oil and added the mustard powder to that, then add that to the potatoes, another layer of flavor. And maybe a bit of butter. I'm doing the whole reduced-calorie thing, so I kept it simple.
yesterday: salad (pea shoots, mushrooms, soy bleu cheese, tahini dressing), brown rice pasta w/ kale pesto & white beans, blood orange segments, pb cookies
today: grilled soy cheese on whole wheat w/ tomatoes & pickles, steamed spinach, sauteed mushrooms, snapea crisps, kiwi

Awesome, thanks so much. I may just try that sometime. The sweet potatoes here are white inside [I've only seen the ones that are orange inside in The States..] but are very tasty. Which kind did you use?
sometimes i see the white sweet potatoes labelled as yams. and the orange as sweet potatoes. both are available in the shops in the UK.
I use the orange sweet potatoes, but I don't think it would matter as long as they taste sweet.

today: corn & fingerling potato chowder, smoky tempeh to go in the soup, half an apple, steamed collards, black pepper crackers

Kawaii! That's a super-cute bento veganf. Did you cut the character out by hand, or do you have a cutter?
Everything except the letters was by hand. The letter cutters are small and I have to hand cut the interior spaces though, so that's a bit of a pain.

Disasterous ganmodoke attempt, couscous 'onigiri' and carrots. Yellow and red cherry tomatoes, avocado, cucumber fences. Celery.
whoa, COUSCOUS onigiri? How does that work?!
Cous cous made up as normal but not fluffled up, and with a splash of mirrin in to hold it all together and then squished in the onigiri mould.

tomorrow: pb & strawberry j on one piece of multigrain bread, prunes, roasted purple potato wedges, carrot sticks, a tangerine

Amazing lunches JBR, so full of variety!
I haven't been packing Bento lunches for long, but here was one I made for myself on Valentine's Day:
Omega-3 Toast w/ Cucumber, onion, sliced apple and Vegenaise (cut with my harp-shaped cookie cutter [I play the harp, ]), fresh blackberries and fresh strawberries arranged in a heart shape over ZenSoy Chocolate pudding.
Looking at this thread makes me sincerely wish I had sprung for the laptop lunch box. Online mine looked so much bigger and when it got here I was shocked! I pretty much have to sit on a PB&J sandwich, cut into fourths, to get it in there!

For the applesauce I sauteed minced red onion, then added minced garlic & ginger, cinnamon, ground coriander, cumin and a squeeze of lemon juice. Added four small peeled, chopped tart apples and cooked, adding water as needed, until soft enough to mush. It was quite good!

does everything spill out if you don't keep it horizontal?
I keep mine horizontal, personally, but I've heard others say that there's not much spillage either way. The purple container comes with a lid, and I've seen people use plastic wrap just in case. The box lid closes pretty tightly on the containers, so unless something is really liquidy it should stay put.

Here are a few bentos that I have made. I take one pretty much every day, but they are often repetitive, or just not that interesting.
tofu salad, salad with olive oil/balsalmic dressing, strawberries, choc. covered espresso beans, (plus I fit a pita on top before closing)
masur dahl and carrot soup, granny smith apple, raw mixed nuts, raisins, ginger snaps
veggie sushi, marinated tempeh, soy sauce, ginger slices, kiwi, sesame candy sticks

very nice fondy - but looking at that granny smith just makes my teeth feel furry *shudders* - much too hard and acidic for me.

DiaShel, I think the key to making bentos without taking a ton of time from your evening or morning routine is to make sure you have leftovers from various things, then you can just piece together whatever you want, add some fruit and little things like nuts/seeds or dried fruit and maybe something prepackaged like a bar or piece of chocolate or whatever else you may have.. Though regardless of how hard I try, for some reason leftovers are a scarce occurance at my house.
