    Cedar you are so right, if I just took lunch in a bag I would never get excited about 2 chestnut mushrooms and some apple slices (boorrring) but in my bento box it becomes interesting and cute and nibbly!

    My OH's bento box arrived this morning after I left for work, and he texted me to say, "Another of those weird boxes has arrived, what's it for?"
    LOL

    I broke the news and promised he can have more of the tortilla chip type stuff and less of the beany salads (one step at a time ladies, one step at a time...)

    Yeah bryzee is right, H&B do them and also Sainsburys do the black sesame ones (next on my hit list to try). I got the Tamari and Garlic ones, and the Miso ones, from my local independent health food shop. I'll find the brand name and post it tomorrow

    Bryzee I haven't seen teriyaki ones before, must hunt them down and eat them!! Sound great!

    Today's lunchbox:



    Clockwise from top left:

    1. 2 Tamari and Garlic Japanese rice crackers, 2 Miso Japanese rice crackers, raw sugar snap peas

    2. Sliced kiwi, handful of dried fruit (mango, mixed berries, banana)

    3. Broken-up garlic and coriander poppadum

    4. Mini pittas filled with organic hummous, raw baby sweetcorn

    Down the side: Sainsburys Free From shortcake and choc chip cookie (both vegan)

    EDIT jamboxrocks I forgot to say yours looks lovely (as always) and I might include some onion rings in soon as my OH likes those too - good thinking!

    Hahaha, sorry Haniska. I posted the ranch recipe over in the pictures thread, but here it is again. I got it from these boards a while back, it was posted by ConsciousCuisine.

    Here's one of my Vegan 'Ranch' Dressings:

    1/2 cup Soy Mayonnaise (Vegenaise is the BEST)
    6 oz. Firm silken tofu
    3 green onions, chopped
    1/4 cup plain soymilk (unsweetened)
    3 T. lemon juice
    1 T. chopped fresh parsley
    1 T. chopped fresh dill
    1/2-1 tsp. each garlic powder and onion powder
    1/3 a tsp. salt (or less/more depending on taste)
    A few grinds freshly cracked pepper and a dash of cayenne pepper


    Mix the lemon juice and soymilk together, stirring and let curdle.

    Combine the remaining ingredients in a food procesor and pulse. Add the soymilk and lemon mixture and correct seasonings as desired. For an extra-rich dressing, add 1/3 cup vegan sour cream with the soymilk and lemon mixture. Add unsweetened soymilk to thin to desired consistency.

    (I usually use dried herbs, 1 tsp to each Tbs fresh called for. I used fresh dill once and used a ton as I wanted super dilly ranch, but it all turned green and didn't taste so hot.)


    And the wings are Tempeh Wingz from Don't Eat Off The Sidewalk zine, but the author has kindly posted some sample recipes, including this one.

    I am gonna make bentos too now! Once I start working. I've admired them for a couple of years and made a few but I haven't really had time/a good reason until now.

    today: the makings of a buffalo tempeh wrap (multigrain wrap, unsauced tempeh wings in the foil, buffalo sauce, iceberg in the plastic wrap, sliced tomatoes on the side), veggies & ranch. this was so good, even cold.

    All these lunches look wonderful! Hopefully I can post some soon- I've just ordered a laptop lunchbox! I normally have tupperware with mini-tupperware inside, but it's a pain to arrange them all and make them fit, this looks so much better!

    Although, I didn't eat it that day. It had been frozen and apparently frost-bitten, because the texture was really gross. I hadn't really thawed or heated it though. It's great fresh!

    what i don't get is how you can put all that stuff together and take it to work or wherever..and then when it comes to lunchtime, all the nicely compartmentalised stuff isn't all jumbled up together in one fantastic globulised mess

    Not every compartment has a lid, just one larger one and the teeny one. The lid of the box closes pretty tightly though, so unless there's something runny in there or you're playing hacky sack with your lunch, everything will pretty much stay in place.

    Today: the makings of a taco salad - leaf lettuce, cilantro, refried black beans, salsa & nacho sauce layered, baked multigrain tortilla chips, guac



    Tomorrow: wheat orzo w/ marinara, broccoli steams & toasted pine nuts, sauteed broccoli, half an apple, apple fritter, grapes

    I think you're asking for the recipe? It's not a recipe really, I made bbq sauce (still tweaking that recipe), bought the tempeh pre-sliced, marinated in the sauce for a half hour or so, then grilled it.

    wow, your pizza looks so yummy I haven't tried using BBQ sauce on a pizza since being vegan, I have no idea why. I bet it's lovely with all those veg. mmm. *adds to list of things to try*

    Est, I kind of made them up hoping for good results. Stretch out a small piece of pizza dough into a long, thin rectangle, spread with minced garlic, roll up like a cinnamon roll, and bake alongside the pizza. They would have been way better with some eb or almond parmesan on the inside, but I was rushing.

    Well it looks fab, I may experiment with this

    So here's day 5 (Thursday):



    and day 6 (Friday):



    (Roasted red pepper hummous in the dip tub and a few squares of Montezuma dark choc with orange down the side!)

    Each day I took a few vegan choc chip cookies for morning and afternoon tea breaks.

    Several other delegates on the course have taken the web address for becky and lolo to buy their own lunch boxes! They thought mine looked v healthy and delish. I also managed to share some of the benefits of being vegan and they seemed interested and asked quite a few questions. You never know what these boxes may encourage them to try!

    Today: brunch leftovers - roasted asparagus bundles, a roasted potato, spicy italian sausages, mini spinach tofu quiches on top, ginger pear waffles, fruit salad w/ agave lime dressing, mini muffins, coffee cake (I'll do a big post with more info in the pictures thread in a few days.)



    I made a companion makeshift bento for my coworker who couldn't attend.



    Tomorrow: more leftovers, piece of flav & fiber bread, grapes, the richest chocolate tofu kahlua pie, chocolate covered strawberries



    eta: Neither of us even came close to finishing at lunchtime.
