me and sosmix never really got on..but i keep looking at your creations VC and thinking i should try some sort of roll..what would you recommend for a first bash?

I love this thread its so pretty and colourful and I am sure any non vegan looking at these packed lunches would have their opinions of vegan food changed!
Personally I never eat pakced lunches...but I still commend this idea!
Basmati rice, pickled gherkin, sugarsnap peas, brazil nut, pecan nut, dried apricot, baby sweetcorn, olives and soy sauce.
How about mixing it with plenty of grated mushrooms, sage and onion stuffing mix, chopped nuts, vegetable stock, minced onions ... and baking into a loaf in a bread tin. Have it hot as part of a roast dinner, or sliced cold to go in with your bento.

Oooooh I got introduced to these bento box things you've all been going on about today. Went with Pavot and Bryzee to the Japan Centre in London, those boxes are so cute...and great for packed lunches. I think one of those babies may be going on the weddding gift list...if john lewis do em!

thanks for the sosmix loaf suggestion..i can see that working..will give it a go i think over the weekend.
here's mine from yesterday..though i weakened and had a nuked jacket spud alongside it..then i couldn't eat half the good stuff
watercress + rocket salad + flax seed lemony dressing...litle pot of engevita + a wodge of raw field mushroom and a delightful fan of red pepper juliene..oh stop trying to sound posh. cucmber stars!!
figs..kiwi..bit of trek bar..pot of goji berries, pumpkin seeds + jungle mix..pistachio halva

Wholewheat penne and cherry tomatoes with Goddess dressing.
Shredded romaine topped with stir-fried Yves ground "chicken" (will have the dressing on the pasta and the "chicken").
Crackers and Sheese.
Skookum bar.

[1] Ebly Durum Wheat salad (with Frys Poloni, sugarsnap peas, baby sweetcorn, pickled red jalapeno chillies, green olives, yellow pepper, sun dried tomatoand gherkin).
[2] Sosmix (nut and mushroom) rolls.
[3] Carrot sticks, pecan & brazil nuts, ghoji berries.
[4] Rocket, baby sweetcorn, radish, red grapes, cherry tomatoes, cucumber, and avocado.
& dried apricots in with the fork.

Yeh I got a laptop lunchbox in dark blue...wish they had dark purple! Now that would have been cool! I've got some good ideas off this thread.

You could just chop them up really fine. This stuff already comes all ground up.
I don't spend that long on them...honest. Maybe half an hour. I tend to cook up a bit more stuff for a meal, and then freeze small portions for later lunchboxes.

Yeah, I'm using it for salad ingredients, as that's what I eat for lunch, I also take an avocado w/ me and some roast capsicum dip, but I take 'em separately, the avo I cut when I have lunch, not in the morning.
Well VC sent me some tracks and I really liked it so was listening to it quite alot. Then I hear they are playing the Download Festival which I am going to anyway and whoop to that! (Btw Pendulum may be Austrailian but they actually live here. Goodness knows why )
