    Default Muffins

    Can anyone recommend a good recipe for muffins? Chocolate or otherwise?

    I have found this one and just made them. They seems to taste really nice, but wondered if there was a better one out there?

    Double Chocolate Orange Muffins

    Ingredients:
    300g wholemeal spelt flour
    100g sugar
    1 teaspoon of bicarbonate soda
    2 tablespoons of cocoa
    Juice and rind of one orange
    100g of chocolate chips
    About a third of a cup of sunflower oil
    Soya milk or water to mix to a good thick batter - not too runny

    Mix your dry ingredients reserving about a third of the chocolate chips for topping then add the wet ones and stir well. Divide between 12 cake or muffin cases (in a muffin tin is best), topping with the remaining chips. Bake at 200C/400F for 15 to 20 minutes until well risen and browning.

    aye..i've got a great one. more like a breakfasty muffin. we've made them as muffins and they're huge..could make them 'bunsize' and they'd still be really filling.

    from the joy of vegan baking - jam filled oat bran muffins

    2 tablespoons ground flaxseed
    6 tablespoons water
    2 cups oatbran
    1 cup whole wheat pastry flour
    1/2 cup brown sugar
    4 teaspoons baking powder
    1 teaspoon ground cinnamon
    1/2 teaspoon of salt
    1 1/4 cups non dairy milk
    1/3 cup veg oil
    1 cup walnuts (optional)
    jam..whatever kind you like/have sitting about in your cupboard

    425 f...220 c...gas 7

    1) mix up your flaxseed and the water in a bowl

    2) in a large bowl, combine the oat bran, flour, brown sugar, baking powder, cinnamon and salt.

    3)in a smaller bowl whisk together the flaxseed + water mixture, milk and oil.

    4) stir in the walnuts if you're using.
    can also put in any other nuts you like..or raisins..or whatever

    5) add to the dry ingredients and stir up till justall mixed together.

    6) pop a blob into each muffin case..about half full..then a blob of jam..then add more mixture til almost full. make sure you conceal all the jam!

    7) bake for 15 to 20 minutes

    8) cool in the tins for a few minutes..then onto a wirte rack etc.

    the recips says 'yields 16 muffins'..but we use this recipe and it makes 6..yes, 6 muffins.

    so..12 buns *


    *approx

    very nice though and a bit healthier than chocolate ones

    Do you think it's possible to make muffins out of only oat bran, flaxseed, brown sugar, unsweetened soymilk, water, and bananas (instead of oil)? Or would I need something like baking soda/powder? I noticed you used some in your recipe, but emmap didn't. Hmmm well yeah, this is about all I've got in my cupboards at the moment and thought it would be quite interesting to see if it would work.

    Bananas go really well in muffins. They help everything bind together nicely.

    So I have really been contemplating whether to buy this book or not. It seems that I collect an amazing amount of cookbooks but never really use them...more just gather ideas from them. But...I love to bake and was wondering if this was really worth it.

    By the way I made scones today and they turned out awesome.....not quite muffins but in my mind better and much easier!
