I just made a really great gluten free vegan dish... I call it "Persephone's Simple Fantastic Eggplasagnarm"... it's kind of a cross between lasagna and eggplant Parmesan. Okay, so the name is a little over the top, but it turned out great and I wanted to share. I hope you all will share your fantastic recipes, too. Without further ado...

layer:
olive oil w/ pepper, salt, garlic powder;
brown rice lasagna noodles (cooked first);
roasted garlic Ragu sauce;
TJ's Misto Griglia eggplant;
shredded Vegan Gourmet mont. jack style cheese (1/2 block) w/ cracked pepper, basil & Herbamare sprinkled on top;
more noodles;
more sauce;
TJ's Misto Griglia zucchini;
grape tomatoes cut in half;
more cheese & spices.


30 min. at 375, broil 3-5 min. at end. Voila!


*Note* For those of you without a Trader Joe's (TJ's), the Misto Griglia is basically marinated and grilled eggplant and zucchini. It takes the simple out of it if you have to do that part yourself, but I bet it would make it even better.
