    Default What to do with puffed wheat???

    Hi all,
    I have a huge bag of puffed wheat that I want to make something sweet with. Some kind of slice or squares? Any suggestions?

    I have a bar recipe that will use part of the bag of puffed wheat. If you happen to have the ingredients on hand this makes a nice treat. These freeze well so maybe you can double the recipe to use more of the bag of puffed wheat.

    Easy Peasy Bars

    2 cups puffed wheat - ground in food processor
    1 cup oats (can be quick oats) -ground in food processor
    1/4 tsp cinnamon
    1/4 cup maple syrup
    1/3 cup brown rice syrup or barley malt
    1/4 cup soymilk
    1 Tb oil - I made them without oil once and they didn't hold together well, canola oil worked well
    optional- fruit or nuts or carob chips or chocolate chips

    Preheat oven to 350 degrees. Mix all dry ingredients in large bowl. Add wet ingredients and mix well. (Add optional fruit, nuts or chips and gently fold in.) Transfer to an oiled baking pan- I use an 8" X 12" pan. Press mixture into pan until evenly distributed. Bake for about 20 minutes. I usually check them after 15 minutes. They are nice and soft after about 15 minutes and get harder after that so it really depends if you want them soft or crunchy. Let them cool and cut.

    I made these once and after they were cooled and cut into bars I poured melted chocolate chips over them so they had a layer of chocolate and sprinkled some chopped walnuts on the layer of chocolate while the chocolate was still warm so the walnuts would stick. They were quite good this way.

    This (accidently) vegan recipe is on the back of my Sanitarium Puffed Wheat packet. Have never made it.

    Fruit Bars

    1 cup pitted dates
    1 cup water
    1/2 cup sunflower kernels
    1/2 cup sesame seeds
    1/2 dried apples, chopped
    1 teaspoon grated lemon rind
    1 cup puffed wheat

    1. Place dates and water in a small saucepan, bring to boil. Reduce heat, simmer 5 minutes or until dates are soft.
    2. Mash date mixture, pour into mixing bowl. Add remaining ingredients, mix to combine.
    3. Press into 8cm X 26cm bar pan. Refrigerate until firm.

    Thanks a lot! I made up the first recipe last night and it turned out great. I threw in a bit of coconut, dried fruit and some vegan chocolate grated on top. Very nice. I'll try the second recipe next time. Wish I could pass the plate around and share some with you!

    WonderWoman- I'm glad you like them. The coconut you added sounds like a great variation. I think the next time I make them I may top them with a thin layer of almond butter and then coat them in a thin layer of chocolate. Sounds good to me.

    Insubordination- I like all the ingredients in your recipe so I'll be trying it soon. Thanks for sharing.
