I just made a pizza from scratch, which I rarely do, and it was lovely. I also made Thai green curry today, I ate ALL of the pizza and the curry. What's my excuse for such gluttony I hear you ask? *deafening silence*

I needed 2 big jars of sun-dried tomatoes, which were $9 each, plus $12 worth of pine nuts!
It made a huge pan and is super healthy so it was worth it. (12 normal sized servings)

Fried rice!

I don't know why it took me til age 32 to try making my own fried rice but it was so easy and delicious! With red pepper, broccoli, shredded carrot, bean sprouts, and green onions! Ooh I could've ate buckets of it!

And the day before that I made nime chow which came out delicious as well! But a little harder to make than fried rice!

The meatless balls were very yummy, but really soft, was a bit off putting, so the whole meals ended up slammed between a couple of slices of bread as a sandwich, haha. That is also my first attempt at tofu aioli - really yummmmm, but has no smell, weird. Consequently, it has a whole bulb of garlic in it, because I just kept adding cloves and couldn't smell it. Perhaps a little overkill, lol..

just became a vegan and all this food is inspiring and delisiouse looking! i just made some flapjack/cereal bar type thing, chucked sunflower oil + lots of oats + sunflower seeds and pumpkin seeds and water and carob choc and other random bits into a saucepan, then flattened it all into a dish to cool! I am suddenly loving cooking now I'm vegan.

Warm salad for lunch:

kale, steamed green beans, tempeh, tomato, scallion and garlic. With a delicious marinade/dressing made of olive oil, balsamic vinegar, lemon juice, a splash of hot sesame oil, red pepper flakes and S&P. I topped it w/ a little pinch of black sesame seeds. YUM!

mashed-up avocado w/balsamic, S&P, fresh crushed garlic, cayenne & lime juice. Right at the end, I threw in a touch of salsa. YUM!

I must say, much more delicious than any grilled cheese sandwich I ever ate. (Not to mention, no animals were harmed in the process!)

Lemon and garlic butter mushrooms. Quartered 7 or 8 mushrooms, chopped up a clove of garlic. Put a couple of tablespoons of nuttelex in a saucepan, let it get hot then in with garlic and some pepper and half a lemon (juice) get hot again then toss the mushrooms through, drop the heat a bit and chuck the lid on. Stirred it a few times then took it off heat after 5-10 minutes.

Tastes soooooooooo good. Might even crank a bit of chili next time too.

cheeseburger salad:

chopped up burger (I used gimme lean), chopped up cheese slice (galaxy american vegan slice), chopped onion, pickle, avocado, cherry tomatoes all on top of a large helping of romaine lettuce. I covered everything in a mix of vegenaise, ketchup and chopped pickle, but any vegan thousand island would do. so good.

I just made some Natural Desserts vegan instant vanilla pudding with coconut milk. So thick and...yum! I couldn't wait for it to finish setting in the fridge, so I licked the mixer beaters. And the spatula. And an extra tablespoon full, just for good measure.
