I'm looking for ways to use fresh ginger in cooking. I've tried peeling it, and then shredding a bit of the ginger with my vegetable peeler into bean or rice or vegetable dishes. Any other ideas?

Make your own skincare! hehehe or even use a little in herbel teas and baking....It can naturally boost your [blood] circulation a little everyday, as far as I know. I am sorry I don't have any actual ideas though, I am interested myself.......... anyone? :P
A lot of people pair it with carrot dishes or put in their juices w/ carrots, apples, and greens. IDK, I don't like the taste TBH s haven' done too much with it.

i've got carrots, and i've ginger. I might have a go at some soup - cheers Risky.
pop it in with finely sliced with raw garlic, chillis, olive oil and lemon juice to make a nice marinade for raw veg

There's a method involving figs I once heard of, it didn't sound all that appealing to me but I'm sure some of the members on here enjoy it.

Yeah the fig recipe sounds a bit...risky.
Fry some onions and garlic until they're softened.
Add chopped carrots and celery, fry for a bit.
Add some freshly grated ginger to taste.
Chuck in a teaspoon or so of paprika.
Add a big pile of red lentils.
Stir it all up.
Add water or stock and simmer until you have a gloopy mess about the consistency of wall paper paste.
Serve with crispy baguettes or ciabattis.
Sound sterling, beany.
Risker, you can freeze fresh ginger? Just pop it in the freezer in a bag or something? That would help since I'm afraid some of it will go bad before I can use it all.
Never thought of carrots and ginger - sounds great.
Yeah, I don't even bother putting it in a freezer bag usually, just either give it a rinse or peel it when I want to use it. It doesn't take too long to defrost either, just chop what you need off the frozen lump, put the rest back in the freezer and it'll usually be defrosted enough to use in about 30 mins or just use it straight from frozen like I do.

I don't bother to defrost my ginger. It peels and grates much more easily when it's still frozen.
I agree sluggie, but if you want thin slices then you do really need to defrost it first.
