    Thumbs up Shortbread

    3000g marg
    100g caster (fine) sugar
    350g plain flour
    50g ground rice
    pinch salt

    set oven to 150C/gas 2

    line and lightly grease a 20-25cm round tin

    cream fat and sugar together till light and fluffy
    sift in flour and rice and mix in together with hands till it comes together like a dough and no flour can be seen
    put mixture in tin and press down with back of a spoon till even
    mark into pieces with a knife
    prick the top over with a fork
    sprinkle with a bit more sugar

    bake for 45-50mins till barely coloured, turn out and cool completely before cutting into marked pieces.

    ..didnt last long in our house

    I made this today - assuming that the 3000 gram margarine was a typo and used 300!

    Delicious, but is kind of crumbly.


    Next time, I may add a bit of oil, or use flax seed boiled in water to bind it better - or do you have another suggestion?

    I bet almond extract would be really good in this. Of course I have no idea if almond extract is vegan... it sounds vegan, though.

    yeah it was a bit crumbly, but i liked it that way!

    Could you by any chance convert those to the American measurements? I don't know the metric system

    Google does though. Enter "100g in pounds" for instance, and see the magic unfold before your eyes!
